    I love how simple this seems! This was probably one of the most comforting dishes we had when we were in Tuscany.

    I remember having this in Firenze! The server came out with it and I said “that looks beautiful” - he shook his head and poured half a cup of olive oil on top - “now it’s beautiful ” he said 😂😂 and he was right! I need to try this

    My Tuscan mother made it all the time. She did add a clove of garlic as well. I didn't see this nonna add salt and pepper, but of course you need it, and lots of grated cheese when serving. If I have a Parmigiano rind I add that while it's cooking. You can also add other vegetables, whatever is in season. It's all your days vegetable requirements in one bowl, and it's delicious.

    I'd love to see written recipes with each episode so I don't have to rewatch every time to make it anything and also makes it easier to search for when I don't remember the type of pasta or dish... Love these mini episodes!!!!

    I also added chopped zucchini and it was very delicious 😋 I had this soup in Florence and loved it so I had to make it at home.

    Made today. "pepolino herb" is the Toscan name for thyme. 00:30 "ribollita" = "boiled again". 😊🇮🇹🍲🍲🍲🍲

    I make soup very similar,with Beans, Kale,Swiss chard,Spinach,whatever I have, but,let me tell you, altho,mine is delicious and does always taste better the next day,it still is 2nd to having that scrumptious bread layered between it.. A must try for sure. Thank you so much..xo

    Hi Vicky do you know it they every add meat to it. When i went to Italy I had Ribolita without meat and it was sooo good. Is it a soup/stew that you can add any left over stuff you have in your frige? Thank you for sharing your videos and Happy Holidays to You and all your Pasta Grannies!!!!!!

    Traditionally no, there's no meat in ribollita. this is a prime example of Tuscan "poor" cuisine, meat was a rarity and the bread used was stale. but you can add some stock instead of water.
