Strapponi pasta is fun to make: just tear pieces off with your hands directly into the cooking water. Marica shares her recipe for strapponi with a porcini, garlic and mint sauce.

    teacupsandlipstick i did not know either, never even thought about it, but when i saw this, i thought freezing the porcini might change the texture when thawed out, but it does not, have a nice day, god bless

    Yummm...very interesting! When making ravioli the scraps were called "rags" by my grandmother. Thanks Vicky!

    My Mother told me that she called them rags and then my Mom passed that info on to me. hehe. Now I am telling my daughter and granddaughter the same. ;-)

    My Memaw called them "rags" too. I always thought it was a throwback to her mom calling them that during the depression.

    We are from America. My grandma made everything by hand and taught me to cook. She lived with us from the time I was 8 years old. What a blessing!

    It’s nepitella, not the same as common mint, less strong in a way. It’s the herb of choice in Tuscany when you cook mushrooms

    Simple and simply delicious! Sometimes we have a motorbike ride around "Garfagnana", where we can find fantastic corky roads and super duper good food along the way.

    This shape of pasta is quite similar with pasta "mandilli".

    how interesting - I know this torn pasta has a variety of names but I haven't heard of mandilli. Where did you come across it? best wishes, Vicky

    Mandilli al pesto is a traditional Genoan recipe. The word "mandilli" is an arabic word which means handkerchief and it refers the shape of pasta looks like handkerchief. Probably that word has transmitted in italian language by tunisian/arabic sailors who visited or attacked to port of Genoa in middle-age. Here is a link below about that recipe.     No salt besides the amount added to the water? Does the salt in the water impart any saltiness at all? I added salt to mine. Thanks for the fun recipe!

    Italian usually don’t put cheese on a pasta dish that has garlic

    This evening I tried this. It was a complete disaster! I ended up eating beans on toast. However, nothing tried, nothing gained. If anyone wants 300g of pasta flour, drop me a line!
