Neapolitan pizza dough is the most recognized in the world, but many get it wrong, so I’ve enlisted world champion pizza maker, Johnny Di Francesco to teach us his secrets to how to make neapolitan pizza dough. True to Italian tradition, Neapolitan pizza dough is made up of very few ingredients, water, salt, yeast and all-important flour. 600ml water (room temperature)
1kg 5 Stagioni Napoletana Pizza Flour, Tipo 00 (RED)
30g salt
1-2g fresh yeast (or half teaspoon of dry yeast)

Thank you for all the tips. This was a 60% hydration dough, suitable for a very high temperature oven. Now, I, and many other home cooks, would love to see you make a 70% hydration dough, as the higher hydration gives a better 'soft-yet-crunchy' result at home oven temperatures (260-260 Celsius and baking steel/stone). Please :)

What about if you don’t have fresh yeast. Example: I have Caputo yeast. How many grams of regular yeast should I use? Thanks in advance and wonderful job on the video!!!

Well the good news is, if you decide to try this, you'll be eating pizza every day trying to get it right. I am making #13 tonight. My first 12 have been varying degrees of messed up shapes, and some were turned into emergency calzones because I screwed them up so bad. They've all been delicious as I learn though. Very delicious mistakes lol

I've been a chef for 23 years all over the world. 5 or 6 of those in pizza shops. I already make epic pizza but these simple fundamentals of neoplitan are so great to know. Always learning and improving. Thank you
I love him so much, he is so genuine with teaching how to make a proper pizza dough! I can’t believe he also taught us how to actually EAT the pizza, I have some jaw issues, so that method will help A LOT for me to comfortably enjoy the pizza, huge thanks and greetings from Spain!

I was on a tour this past fall and we went to a famous restaurant in Napoli to learn how real Neopolitan pizza is made Unfortunately, not enough time to go through all the steps. Very basic lesson. Glad to see your video. It covered everything!

I LOVE that he used the Mozzarella as garnish at the end . Perfectly done! The mozzarella gets perfectly warm to eat fresh on the cooked pizza without being soupy as do not need to cook the mozzarella when it is fresh like Bufala he used and was done perfectly just like the Master Champion he is !

I made the pizza dough as described in this video and man is it good!!!! I had friends over today and yesterday decided to make pizza for today in my g3ferrari pizza oven, so the dough had all the time to rise and rest. Result was a super thin, very crispy pizza bottom and very light and a nice crispy fluffy edge (finally a pizza that is not heavy on the stomach). Got good compliments from my friends and they are too going to follow this pizza dough recipe. Thanks for this video!!

Been to Brunswick couple times and found a small italian place run by bunch of young baking enthusiasts, seemingly from Italy, in the corner the old city plaza. They make the dough and the pizza exactly the way shown in this video. Results are astonishing, in a single meal those guys have completely redefined my taste in pizza and bread in general.

Vincenzo im from Melbourne and love cooking, italian in particular. I was hooked on italian food when i would go to my friends house who had traditional italian cooking. I loved it. I can tell you that your channel is phenomenal and you should be proud of your following but I’m surprised you dont have much more. The quality of your videos is fantastic with the music etc has really progressed from when you started and having excellent how to videos with celebrity chefs will only help. I hope to meet you one day so we can share the love of cooking. (Im Irish in hertiage) but dont hold that against me, the looks on the faces of the old nonnas working in the Italian delis when I ask for traditional Italian cuts is priceless. Excellent!! I have tried to make pizza from scratch some years ago, but never fully knew the exact guidelines. I will try now. Italian pizzas are the best, and my favourite is the seafood one.

I was wondering the same. The cheese won’t be soggy if you cook it hot enough and long enough. But it also won’t taste as fresh. I’ve never tried just putting fresh cheese after the bake. I think I’ll give it a shot today Interesting

Breville has recently released a new pizza oven that is pretty awesome, not cheap though but you get what you pay for, usually.

Lovejit Music Yup just made it with dry yeast. Use 1/2 teaspoon. Dry yeast is more concentrated than fresh yeast
