So I went to the pizzeria of the great Giuseppe Celardo, pizza maker, owner of the "Mangianapoli" pizzerias in Rome whom I thank again for his availability.
As a customer of this pizzeria I want to say that its pizzas are excellent!

Ho notato che hai messo il lievito e il sale insieme ma ho visto tanti video di pizzaioli esperti come lei mettono il lievito e il sale separati perché il sale quando va messo insieme al lievito rallenta molto la funzione di questo ultimo. C'è mica una ragione che li hai messi insieme?
Se nota la dedicación de años y años en esas pizzas, un gusto poder ver como las hacen, ojalá algún día las pueda llegar a probar!! Mucho éxito 👏
