Тәжірибелік нұсқаулар және стиль

In my videos, I show authentic but alternative Japanese home cooking, which can be make with the ingredients available outside of Japan.
Today I'll be making Mochi (in Japan, it's called Daifuku-mochi) with strawberries, a typical Japanese sweets. It is very delicious and actually not very difficult, it can be made under 30 min. Please try for yourself!!
Ingredients for Mochi (8 pieces)
Mochiko/Glutinous rice flower (sweet rice flour) 100 g
Sugar 40 g
Water 140 ml
Anko (red bean paste) 20-40 g*
Strawberries (optional) 8
*depending on whether to use strawberries or other fruits.

Hello Taiji, thanks for the video. I’ve always wanted to make one ever since I tasted my first mochi some years ago. You make the cooking process really easy. I’ll take your advice to substitute fruits in lieu of red bean paste. Cheers!

I tried doing it today, also with a more natural approach to the filling (Almond paste/Cream) But next time I'll be more brave with the starch... Should have listened to you Taiji... :'-) Thanks for the easy to follow & informative video as always!

Goodness ..I love mochi..it is a new kind of sweet to me and I like the fulfilling feeling of chewing the rice..but it can be a bit breath taking.. Here in London ITSU sells them and my preferred among the variety are full chocolate, or full mango (creams filled). I thought the iced one not to be original. Than they have flat mochi they call cakes..♡♡♡

I just plop the hot mochi onto the mochiko flour and then use a wet fork to separate a hot piece of mochi to the side; then place anko on top and then pull up the sides of the mochi to cover the anko. All of this is on the table surface. Finally pick up the filled ball and round it out and put it seam side down on a colored cupcake paper. You hardly handle it with your hand.

I love mochi and I want to make it. But I’m so confused about different versions on youtube (specially about the time of microwaving. And I think your version is traditional one. and also darker than we usually buy from supermarkets. But why? Thank you for making these oishi videos 😊

Its definitely not the traditional method for making mochi ( which is very time and labor intensive) But its a simple variant that is easier to make

do you mean cornstarch instead of tapioca starch, which I use in the video? then no, not at all. starch have very little flavor, if any anyways. but if you mean cornstarch instead of Mochiko/gluteneous rice flour, then it will not work.

yes, as in the recipe. it have an effect of keeping it soft after a while. if you add more, then it prevents it from freezing, as in this video of Mochi ice cream: kzread.info/dash/bejne/hYh8sZmbnsWoYbw.html
