These little snow ball cookies are a must make for your holiday baking. I make these almost every Christmas and they make a wonderful dessert anytime of year.
Mexican wedding cookies can be made gluten free by using a gluten free flour, which I have done many times and works out great.
It's important to roast the pecans for that rich flavor. Then either chop them up very fine or place them in a food processor.
I used a kitchen aid mixer to mix my dough but you could use a regular hand mixer to get the job done too.
After all the ingredients are combined you want to refrigerate the dough. Cover it with saran wrap or what ever you have and chill for at least 30 minutes to an hour.
Preheat your oven to 350 degrees F.
Roll the dough into 1 inch size balls and place on parchment paper or or a greased cookie sheet. Space them about 2 inches apart. They don't spread out much.
Bake the little pecan balls for about 15 minutes or until they are golden brown. Place the cookies on a cooling rack for a few minutes.
Roll the cookies in powdered sugar one or two at a time and place them on another cooling rack that is over a plate. Once all the cookies covered, place some powdered suger in a fine strainer and shake more powdered sugar over the cookies to get a nice even coating of sugar.
Now go ahead and try one! Yummy!

Hi Rockin' Robin! After watching your video and realizing that I had all the ingredients I decided to go for it and the cookies were delicious! HI Cindy, the nuts really add to the flavor of this cookie. If you want to leave them out then you are going to have to add more flavor with extracts. Try adding more almond and vanilla extract.

I got 32 cookies out of that one batch. But next time I want to make the cookies smaller for hopefully double the amount.

Are these crisp? I like some crunch to my cookies i cant stand soft ones.😞😖

Hi Robyn oh my cookies are just the original recipe for Mexican cookies or as we call them here ( melting moments) I want to find a healthier version though and when I do I'll pass on the recipe. We don't celebrate cinco de mayo here Hun, I can imagine the hard work you put into them. Well done
Your recipe called for 1 cup butter but the video shows you used 2 half's thats only a 1/2 cup which is best?

Use 1 cup of butter. Two halves or 2 cubes of butter equals one cup. Hope that helps.

Have you tried taking them out just a "little bit" early? I'm in Phoenix, AZ and lots of food is drier, as "moist" is a seldom used word here. I find if you take things out of the oven a tiny bit early, you have a better chance with the "dry" war. I hope it works wherever you are.
