Say hello to your new favourite lemon cheesecake 🍋💛 It’s so simple, a delicious no-bake recipe, and I utterly adore it. This recipe has always been in my blog top favourites since I published it, and I am not surprised. Sometimes, the simple recipes are the best 🥰🙌
Recipe:
Biscuit Base
■ 300g shortbread
■ 100g unsalted butter
Cheesecake Filling
■ 600g full-fat soft cream cheese
■ 100g icing sugar
■ 300ml double cream
■ 75ml lemon juice
Decoration
■ 150 ml double cream
■ 2 tbsp icing sugar
■ Lemon slices
■ Lemon zest

I'd say it's best to swirl it into the top, so that it still sets the cheesecake! x

I have not try shortbread biscuits in a cheesecake sounds great will try it could you use shortbread bass for other cheesecakes thanks 👍

I like Lemon and Sultana cheesecake, would it be best to soak the sultanas before adding them?

It depends on where you are based in the world, but you need the fattiest liquid cream you can find, often called Heavy Cream in other places!
What can you use instead of Icing sugar??
What size tin you use please
I always have trouble with the filling to be too soft, it definitely can't be sliced like yours do. What am I doing wrong please?

Are you using cream cheese or mascarpone? It can be much softer depending on where you're from.

Cream cheese, either shops own brand or philly, they both turn out sloppy.
