How To Make Lebanese Ice Cream (Booza)
1 cup cream
3 cups full cream milk
1 cup sugar
1/2 tsp ground mastic (arabic gum)
1/2 cup cornflour
pinch salt
1/4 cup crushed pistachios, extra for garnish

    Booza is Syrian and it was invented in the oldest booza shop called "bakdash" the shop was made by a syrian to feed turkish soldiers

    Wow! Looks delicious! Using agar and corn starch is a new idea for me! Did you let it warm up after the freezer before scooping or is that a natural effect of the agar/cornstarch ingredients? Sometimes ice cream is too hard to scoop!

    İn Turkish it’s called Boza and it’s a thick, slightly fermented millet drink served with roasted chickpeas..

    Hi Henry. The Booza came out amazing - Great texture and taste. I guess the world is divided into 2 people: those who like the Mastic taste and those who really can't stand it. I love it but my family and a few of my friends really don't. Any idea for different great taste without the mastic and how to achieve those ? Thank you

    I like the idea of using the ice cream maker But I'm looking to make an Arabic ice cream roll covered with pistachio and your receipt did not have any ashar. Are you saying that by adding the cream to the ice cream maker we do not need ashar?

    This is cold Mahalabieh not Arabic ice cream. The Arabic ice cream is made of Sahlaab, and there are different kinds of Sahlaab in the market you should know which kind of them to use.

    the mastic is Greek The natural mastic of Chios Chios mastic is a unique agricultural product that is produced only in a small geographical area in the southern part of Chios. The settlements of this area are called Mastichochoria. Historical data Mastic is the product of mastic bearing that grows and thrives only in South Chios. There are indications that cultivation, but also its commercial exploitation as an exportable product, dates back to antiquity (Hellenistic period). Although there were other types of mastic at that time, the high quality of Chios mastic established it as a unique product with huge commercial value and exclusivity of production. Inevitably, the history of the island was associated with mastic. The Byzantine Empire handed over the island to the Genoese in the 14th century, when the production and trade of mastic was systematized and the Ottomans - successors of the Genoese in power - forced the Chians to pay a special tax in kind (mastic). After the First World War, there was a decline in the production and value of mastic. The establishment of the compulsory cooperative "Chios Mastic Producers Association" helped despite the adversities of the time and the Second World War, to recover production. In recent years, systematic research, development and promotion activities have increased sales and reputation of the product, as well as the income of mastic producers, whose interest has been significantly reheated.

    "Here" being the US. Where I live corn starch is a fine white powder made from just the starchy part of maize. Corn flour is a fine powder made from the whole kernel. It is yellow, sweeter, and has more fiber and protein

    Greek store or Middle east Ethnic stores .In Turkish damla sakiz if you got Turkish ethnic store around you.It is the resin of Mastic trees.

    in Greece there is mastic everywhere in supermarkets and in you it must be in supermarkets
