How to Make Kurdish Dolma

This is the traditional dolma recipe that I grew up on! I'm going to show you guys how I make dolma step by step. Grab a pen and paper and take notes. The kurdish way is packed with spices and herbs so get ready for a burst of flavors. I'm excited to pass down this tradition to Teeny one day and learn more Kurdish recipes from my mom! Happy Newroz!

For the people that are saying this is not how you make dolma, need to realise that there are MANY ways you can cook it. Being a Kurd myself, I know for a fact this is not how we do it but that doesn’t mean it’s wrong.

Yes there are different methods depending on region. Even Greek Dolma is different.

NO... Dolma is Stuffed/filled, Sarma is wrapped.. Just use a Turkish dictionary... you made Sarma, not Dolma... Root word Sar = Wrap/Cover, Dol = Stuff/Full/Fill :)

@@hamidaara4509 if it's not filled/stuffed, it can't be Dol.. if it's wrapped, it can only be Sar.. It's Sarma, not Dolma... Perhaps a Greek made the same mistake.. Just use a dictionary... Stuff VS Wrap.. Dol VS Sar

for us iraqis the whole family comes in the kitchen just to witness the dolma being flipped in the bowl. Best part! Also i dont know why i watched this at 12 am because now my mouth is watering

wh oelse got triggered when she didn't do it the traditional way on a flatter tray flipped upside down quickly so it keeps its shape when its out of the pot and she fucking used steak kill me now please

Is it really Dolma or Sarma? some Kurds call Sarma a Dolma... Cabbage or Grape leaves is wrapped (Sarma), and stuffed/filled vegetables such as capsicums, tomato, zucchini, is (Dolma)

@@TheOzTube its called yaprax actually i dont know for turkish occupied kurdistan but over in the kurdistan near iraq we have 2 types one with vine leaves stuffed in a square shape with yoghourty rice with dill without any tomato paste and lamb meat only which is called galamew and then theres silq whcih is similar to what you said and what she did but she used the wrong leaves,meat and technique we use chard leaves stuffed in the same red rice she used rolled in a kind of rolling technique with other stuffed vegetables like the ones you said and eggplant and hot peppers ect

It's so interesting how different each dolma is in different countries, cities and families. I'm from Kirkuk and we usually make our Dolma white for spring/summer and red (with tomato paste like yours) in autumn and winter. I also steep a ton of sumach in the water before I put the water into the pot hahaha so it's extra sour. And we exclusively use round-corn rice for Dolma, it's so good because it's starchy and absorbs the liquid so well. Made Dolma two days ago in celebration of Newroz, it was my first time doing it all alone without mom - turned out pretty well! I was so proud of myself. :D
Yesss girl!! My mom also adds ground beef to the filling and stuffs tomatoes, eggplant, zucchini ans my fav is when we add sliced potatoes and pakla (long green beans) to the bottom of the pot. Ahhh soo good! Newroz peroza💖

I am from Azerbaijan, we do dolma with meat. I could eat it every day, so delicious. I wrap it differently too, I guess yours are a little messier than mine.

Sazan, in Romania (East Europe) we have this recipe, we are stuffing bell pepper and grape leaves with a similar stuffing. We call them SARMALE. It is delicios! Xoxo

Solin T. Sarmale are stuffed grape leaves, and the stuffed Bell pepper is called : ARDEI UMPLUȚI (stuffed pepper).

Look so good !! In France there's a recipe where we fill up tomatoes like that but inside we put meat and a bunch of other things it's called : tomates farcies, you should try it it's so good !

Sazan a tip! Get a tray , and then put some kurdish nan's on the tray then pour the dolma over it , the nan will be drenched with the dolma's water like karkuki style , its so good🤤
Just some things we do differently The onions we place in the microwave to make them softer We use sumac water instead of lemons and it changes the taste so much. Trust me this is the secret ingredient

Yummy my friend’s mom makes it with tomato and zucchini stuffed too! But my favorite has to be the onion (because of the sweet taste and the sour rice) and the grape leaves are a classic (and a must!) yummy! MashAllah! Alhumdulilah!!!😍💕

Share more of these recipes please, makes me so happy seeing someone cook food that they love! You also need to try the arameic version of dolma its so delicious!! Heres how to tweak your moms recipe to make it more like the arameic: first of all get yourself some type of minced meat that you like (we always use beef mince), the filling should be 1 part rice to 1 part meat, reduce amount of tomato puree to half (the filling should not be that wet since we got the meat), instead of spring onions use chopped white onions, chop some bellpeppers (preferably some red and yellow for that sweet undertaste), replace the dill with chopped (either fresh or dried) mint, this is the MOST important step! use whatever spices u like, preferably paprika, black pepper, chiliflakes. when it comes to the wrapping of the dolma try making them like thin cigars. they should be about 7cm wide and 1.5cm thick. fill the pot with water, but not all the way up to the dolma. its gonna steam anyways so everything is gonna get cooked. also we always use a cut of lamb in the bottom that we braise for several hours on low heat until the dolma is all wrapped and ready to be put in the pot. let the lamb cool first (do this step the night before!!). Please try this and let me know how u liked it :)

"you gotta watch me do it"😂😂 like my mom, too. I love adding Tamarind with the water for sweet sour taste. I cook first for 10 minutes without adding the water until they get steamed (I put a plate on for pressure) and I add the water mixed with olive oil and tamarind😃. The onion part, I congratulate you seriously🤝😂. You handled it perfectly unlike me☺
