OMG!!! These cream cheese muffins are soft, moist and delicious. It is heavenly when you bite into the cream cheese filling which elevates the cheese flavor. No tools required so it's super easy to make.
I used these white sturdy paper cups (as in video) as they're a lot easier - no mess and less cleaning. As these paper cups are quite big, I was able to make 8 muffins. When I tried with muffin molds, I could get 12 muffins out of this recipe as the size is smaller.
These cream cheese muffins can also be eaten cold and it is delicious. As cream cheese is the star of this recipe, try using a good quality one as the result will definitely be better. The sweetness level is just right but if you prefer less sweet, you can reduce the sweetener slightly.

NUTRITION INFO PER SERVING
Total carb = 2.2 g
Dietary fiber = 0.4 g
Net carb = 1.8 g
Calories = 318
Total fat = 32 g
Protein = 6.7 g
INGREDIENTS FOR CAKE
Cream Cheese (softened) = 80 g / 2/3 cup
Unsalted Butter (softened) = 120 g / 1/2 cup
Coconut flour = 60 g / 1/2 cup (OR 240 g / 2 cups Almond flour)
Monk fruit = 80 g / 0.4 cup
Whole eggs (room temp) = 4 large
Whipping Cream = 120 ml / 1/2 cup
Baking powder = 1 tsp
INGREDIENTS FOR CREAM CHEESE FILLING
Cream cheese (softened) = 200 g / 1 2/3 cups
Lakanto Powdered Sweetener = 24 g / 3 tbsp
Egg Yolks (room temp) = 2 large
(Note: Mix the cream cheese and powdered sweetener with a spatula until well combined. Add the egg yolks and mix until smooth)
DIRECTIONS
1. Preheat the oven to 340F or 170C
2. In a bowl, whisk the butter, cream cheese and erythritol until well combined and butter has turned into a pale color.
3. Add the eggs one at a time and whisk until well combined.
4. Sieve the coconut flour and baking powder into the mixture and mix until the batter is smooth. Then add the whipping cream and mix until well combined.
5. Spoon the batter into muffin cups or molds. This recipe makes 8 medium sized muffins in cups (as in video) and 12 muffins in molds. Fill each cup or mold until 1/2 to 3/4 high. Set aside.
6. Prepare the cream cheese filling by mixing the cream cheese and powdered sweetener with a spatula until smooth. Then add the egg yolks and mix until well combined.
7. Spoon the cream cheese filling into a piping bag, tighten the bag and cut out the tip of the bag.
8. Squeeze the filling into the middle of the cake batter until all the filling is used up.
9. Bake at 340F or 170C at the middle rack for 15 to 20 mins or until browned and cooked.
10. These muffins can be refrigerated up to a week and they are delicious when eaten cold.

    Omg!! I tried this delicious recipe, but with 3 small changes. This immediately remind me of the mantecadas Bimbo (Spanish unhealthy dessert muffin) This is the super healthy version of it plus cream cheese!!! Loved them! 1.- I am one who doesn’t prefer coconut flour. I did as you suggested and use 240 g of almond flour. 2.- I used 80g monk fruit instead of erythritol 3.- I added vanilla extract ( didn’t measure the amount) Delicious!!!! Thank you soooo much

    L M it will work!! With the flour I made 12 muffins + 1/2 of coffee mug ( I only have 1 muffin pan lol) if I had 2 pans maybe it would have been 14.

    So I made these today and oh, my God! They're SO GOOD. SO VERY GOOD. Such a delicate, amazing tasting confection! Melts! Melts in your mouth! THANK YOU for this recipe!!!! THANK YOU 💞. I baked 20 mins. I used a 12 cup muffin pan. I greased each muffin cup on the tray with butter. They came out easy! I used cooking cream. I added vanilla extract. Otherwise I followed exactly.

    I like this recipe and it just gave me ideas to make a variety of it. By the way , You said you can baked this in bigger muffins ( or cup cakes I guess ) resulting in 8 pcs., do I need to adjust the baking time?     I make muffins from the batter based on eggs, cottage cheese I make myself and almond flour. I am not sure they are keto, as I do not add butter. But I found this type of batter gives very soft and moist texture. The consistency of the batter very similar to yours.

    Butter is definitely keto. If you add regular sugar then its not keto.

    You do not “need” butter for the meal to be “keto”. If you only use eggs, cottage cheese and almond flour - it sounds “keto” to me. And maybe keto-approved sweetener? Now, for those who are strict keto and count their macros, it would depend on the serving size. And whether they can stick to one serving only!!! (Not me. That’s why I don’t bake.)

    Jana F Thank you for the explanation, I was curious to see cottage or cream cheese as an ingredient, I find that nearly any batter or dough benefits from having cheeses. It not only gives nice, soft and juicy texture to the bake, but also substantially increases protein content in the product improving its nutritional value. I am not on keto diet, but as a coeliac I have found that most of commercial gluten free dry mixes consist of starches of questionable nutritional value, that I avoid wherever possible.

    Ok so just to report back. It took a full 30 minute to get the muffin cooked. It still was very moist in the middle without the cream cheese filling. Kind of like a corn muffin. Kind of gritty with just a hint of sweetness. No real flavor so the filling would give you the boost. But not bad for a muffin. A little flavoring of some kind would be good if you are just making the muffin part, though that may add too much liquid. Grandson says, Lilly's chocolate chips!

    I baked it yesterday. The recipe was simple, the muffins were extremely delicious and we couldn't stop until remembered how much calories were in each muffin :)) What cheese cream did you use? It was no details in the recipe - just cheese cream. I used Mascarpone. It seems too fatty: 40% of fat! What do you think? Should Mascarpone be replaced with less fatty cheese? For example Philadelphia?

    Realized after mixing the batter I didn't have enough cream cheese for filling so I just baked these. After 20 min they aren't anywhere near done. Just put them back in the oven. Gritty. Will see how they do for an extra 10 min.

    Hi there, I need to thank you for your creativity and fantastic recipes! Also, the 2 creamcheese amounts , 2/3 cup and 4/5 cup are extremely similar, yet when you list these amounts in grams, the 2nd amount is more than doubled (80 grams versus 200 grams). A discrepancy?

    So sorry for the discrepancy! 80 g is 2/3 cup and 200 g is 1 2/3 cup. Thanks for hilighting😊

    If you're referring to the cream cheese for filling, its 80 g or 2/3 cup

    You can also use other keto sweeteners like Lakanto which is made fm monk fruits, stevia etc

    60 gram = 1/4 cup, not 1/2 cup of coconut flour

    It is based on 1 cup = 120g So 1/2 cup = 60 g As cups and spoon measurements can vary everywhere, it is best to weigh the ingredients for accuracy. Thanks for highlighting 😊
