How to Make Japanese Croquettes (Korokke) (Recipe) コロッケの作り方 (レシピ)

Soft creamy potato with ground meat inside a crunchy panko shell, Japanese Croquettes (Korokke) is my absolute favorite Japanese food! This is my mother’s best recipe and I’m sharing her secrets with you.

INGREDIENTS (Please check the website for detailed info)
* For Potato and Meat Mixture
2 lb russet potatoes (900 g, about 4 potatoes; please use Russet potatoes)
1 onion (9.6 oz, 272 g)
1 Tbsp neutral-flavored oil (vegetable, canola, etc)
1 lb ground beef (454 g; 85% lean)
½ tsp kosher/sea salt (I use Diamond Crystal; Use half for table salt) (for meat)
¼ tsp freshly ground black pepper (for meat)
1 Tbsp unsalted butter (for potato)
½ tsp kosher/sea salt (I use Diamond Crystal; Use half for table salt) (for potatoes)
¼ tsp freshly ground black pepper (for potatoes)
* For Panko Coating
½ cup all-purpose flour (plain flour) (60 g)
3 large eggs (50 g each w/o shell)
2 cups panko (Japanese breadcrumbs) (120 g)
* For Deep Frying
4 cups neutral-flavored oil (vegetable, canola, etc) (946 ml; for deep frying)
* To Serve
Tonkatsu Sauce (or make my homemade recipe)

I've made these a few times..I forgot how to make these.. As a teen I had the awesome privilege to live in Japan for a few years and I'm 52 and I long to go back often.. a piece of my heart is still running around through the little neighborhood streets to get my melon gum and coffee from the vending machine. My favorite food was Curry with the chicken cutlets, pickled ginger on the side. The curry isn't the same here. I found these croquettes on here and they're so delicious. I make tonkatsu ,I also loved Sobe cold noodles ,yakisoba.. the crepe stands were so Delicious 😋 I could talk for hours about my happiness there ...🥲🫠🥰.. Such wonderful people ❤️ The Japanese people are so very beautiful 😍.. oh GYOZA OFCOURSE 😆
I love japanese food i miss japan
In Scotland we make something similar called a pattie, except we batter and fry the mince and tattie mixture instead of using breadcrumbs. Smoked haddock is a good substitute for mince too

I made these and they were great. I used regular potatoes, what we have here, and used ground pork because that's all I had. Your recipes never fail and I'm encouraged to try more of your recipes. Thank you for sharing.

I’m Japanese and live in Hawaii. I remember watching a Japanese drama show on tv and they had croquette for dinner all the time. My family had never heard of it until we watched that show! Thank you for the video as I have never tried it before. 😀

I figured it would be more complicated but it's basically just meat and potatoes mushed together and fried. So basically when I was a kid and I'd mix my potatoes with the rest of my food before eating it but plus it's fried. Can't wait to try it out. Thanks

Thanks, it's just a bit time consuming. But I love this dish so I don't mind making it (while I drool and wait to eat first bite!).
Japan guys and girls used to drink any kinds beverage after meal time for them .. south korea dish used to server to various soup with rice :)
So my.favorite website for Japanese cooking has a youtube too. Great!
