Crab Cream Croquette : Honeykki

Crispy on the outside, soft on the inside, the crab cream croquette.
It was in NAVER Webtoon [Want to come by for dinner?] by Omyo, and I have been dying to try it.

* Ingredients (15~20 croquettes)
250g crab meat, 1 onion, 120g unsalted butter, 100g flour, 600ml milk, taste with salt and pepper
flour, 1~2 eggs(lightly whisked), bread crumbs, oil to fry
* Instructions
Chop the onion and crabmeat to shred. add the buteer(2~3Tbs) to a frying pan and melt it.
add chopped crab, onion and fry it. add salt and pepeer and mix.
another pan, add the butter(120g) and melt it. add the flour little by little in 4 to 5 portions.
butter and flour and mix well. add the milk, little by little.
when all the milk has been added, the sauce should be thick like this.
add the fried crabmeat, onion and taste with salt & pepper.
pour the sauce into a square pan with plastic warp. chill well in the refrigerator.
If the cream filling is soft it will become easy to handle after about an hour in the refrigerator.
When it's cooled and easy to handle, score the surface into 15 to 20 portions.
coat flour, eggs and bread crumbs and fry it until it gets golden.

I've done this recipe a couple of times and I love it. I usually put them in the oven instead of frying them for a healthier version. They taste delicious!!!

how abt if i dont put the bread crumbs ?
Just tried this recipe last week, and it turned out so great! The croquettes are very tasty and filling. Highly recommend it to share with your family/friends or when you’re going to picnic since the serving is big, but just make half of the recipe if you don’t like to make a lot. Will be making this again soon. Thanks for sharing this recipe! ❤️🙏🏻

I tried this recipe today and this is amazing!😭🥺🤤❤️❤️ Actually i didnt have all of the ingredients but since i am dying to try this recipe i skipped some and swap it to another ingredients. I use shrimps instead of crabsticks, no onion but i put some of large green chilis, i use maizena instead of flour, the usual margarine not unsalted butter, i dont have any bread crumbs so i use all purpose flour and i just use low fat milk😆. The process of cooking is the same, and maybe it didnt taste exactly like what honeykki made since we all have different kind of preferences. So i think you can try a lot of varieties of fillings perhaps with sausage maybe? or what ingredients you have at home. I havent try it with sausages but i believe it will be amazing👍 Cooking is a way to de-stress for me especially in this pandemic even though the cleaning part is another story😂 Thank you honeykki for the amazing and tasty recipe, i hope i can try another recipes from you and stay safe everyone😊😁❤️

채식에도 뭔가 종류가 엄청 많더라구요~ 달걀이나 유제품처럼 아예 동물에서 나온 것은 하나도 섭취하지 않는 비건부터 윗분 처럼 달걀 유제품은 드시는 분도 계시구 뭐 달걀만 안드시는 분도 계시고 그렇더라구요 ㅋㅋ

I like the idea of this but I would try it with less flour in the cream and add cheese to it.

Less flour would make the white sauce too runny to hold its shape even when very cold; in the video it barely held its shape with the thicker sauce. Cheese sounds good, but might overpower the delicate flavor of the crab--and i think I would use real crab.

Made these before and it was already filling without the cheese and it was hard to finish the rest. Maybe in a smaller batch it could work.
