How To Make Italian Stuffed Mussels with Katie Parla

Katie Parla, author of Food of the Italian South, stopped by the MUNCHIES Test Kitchen on her way back from Rome to show us how to make stuffed mussels. Not only is this recipe quick and easy, but making your own breadcrumbs is a great way to use up leftover or stale bread. Serve these stuffed mussels as a main dish or as a tasty snack.

    Interestingly enough Turkish cuisine on Mediterranean coast regions and major coastal cities like Istanbul and Izmir has an similar stuffed mussel street snack that is called midye dolma (Literally means stuffed mussel) . They use pepper and white rice only for stuffing and cooking them together inside the mussel. The street vendors serve it with lemon for extra flavor to squeeze on it in according to your taste. I would have never guess that Italians would have something similar as well. I would love to try the Italian version of the recipe one day.

    Personally don't ask me for cheese to put on seafood pasta (not even a fan of butter in seafood risotto), but add a sneaky spoon of Parmesan in breaded prawn or squid skewers and they will taste AMAZING.

    usually with any type of shellfish if they are closed and resist being opened up then they are good but if they are already open and dont try to close then they are dead and should be discarded.

    Big mistake to open mussels! They should be put in boiling water first and they open, even just for a few seconds. If they don't they are not good to eat.

    @@Paradockzz Considering this "professional chef" opens mussels before cooking...probably. Checking whether mussels open after cooking is the main way to check whether they're good or bad...you know to prevent food poisoning. Opening them before cooking makes it impossible to tell.

    ​@J G Yep, I lived abroad in the area for several years. :-) Even did Peace Corps for two+ years in Albania. The opinionated nature of the region can be culturally shocking to someone from West Coast and Midwest. I personally found individuals from Greece and Southern Spain to be especially opinionated.

    @J G I can definitely agree with that. I think everyone might be better suited to get along better if they understood that as well. I work with students and families from various parts of the world and it's so interesting how people are similar and yet so culturally different depending on the environment in which they are raised. Edit - oh, but with that said, it's also nice to not be overtly rude, and she did come across that a bit.
