How to Make Egg Noodles

A simple old-fashioned recipe for making egg noodles at home. Just 4 ingredients needed to make your own pasta!

Ingredients
3 large eggs
2 ½ cups all-purpose plain flour, divided (310g), plus additional for rolling
1 Tablespoon water
1 teaspoon salt

Instructions

00:22 Combine 2 cups (250g) flour and salt and whisk together. Make a well in the center of the flour mixture and add your eggs and water.
00:53 Lightly scramble eggs with a fork and then use a fork to work all ingredients together until completely combined.
Add additional flour as needed (you may need even more than indicated in the ingredients above) until dough forms a tacky (but not too sticky) ball.
01:48 Transfer to a lightly floured surface and knead until smooth and elastic (about 5-10 minutes). Return to bowl, cover with plastic wrap, and allow to rest for 20 minutes.
03:07 Once dough has rested, divide into 4 pieces. Take one piece (re-cover the remaining pieces), place on a lightly floured surface, and roll into a paper thin sheet with a lightly floured rolling pin.
04:48 Use a sharp knife or pizza cutter to cut into strips of desired width and length. Collect strips and dust with a bit more flour to keep from sticking together. Set aside and repeat with remaining dough.
To cook, bring a large pot of heavily salted water to a boil. Add noodles to boiling water and cook until tender (how long this will take will depend on how thick or thin your noodles are, it can take anywhere from 5-15 minutes).
Serve with desired toppings (I like to use butter, pepper, and parmesan).

    We make these egg noodles for Thanks Giving dinner. We cook them in boiling turkey broth and they come out in a nice gravy and we put it over the mashed potatoes and oyster dressing! A southern Illinois recipe.

    yea, at the same time, it seems she doesn't have the experience of ever making noodles... I myself am new to it, (been doing it for a few years) but you don't want a marble table top w/o using more flour as a base to conduct the dough. that's just basic principle. I could go on, but I think you'd get butthurt.

    Thank you googled the recipe amazing how many ways there are to make noodles some had milk some had butter! As a child I grew up with just basic egg noodle. Flour ,eggs, bit salt and that little water! We rolled them, not as thin. We liked the thick chewy noodle! Just cooked a late holiday turkey and have so much turkey left over to do a soup with egg noodles! Thank you. I hope you are still posting. Your directions are very complete!

    Winter storm coming, went to store. Got everything I need for my sour cream noddle bake except medium egg noodles. Not to worry , I remember my grandmother making noodles. She didn’t use the egg whites if I remember correctly. Anyhow they came out delicious. Thanks for sharing.

    You can dry them a bit before cutting and cooking by hanging the rolled dough on newspaper over a clothesline.

    parchment paper or a cutting board to turn the rectangle so you can cut long noodles if you like ? a metal spatula perhaps for getting them up ? not a noodle maker here, but going to try! :)

    If the batter was too runny, yes I don’t think they will be the right consistency. Did you weigh your flour by chance? Sounds like the wet to dry ingredient ratio may have been just a bit off. I hope they were still tasty! 😊

    A friend sent me the link to this video, and I can't wait to make my own egg noodles. I've been on a Stroganoff kick as the season turns cool, and egg noodles are my favorite vehicle for the dish. Could I lightly beat the eggs in the bowl before pouring them into the flour well, or is there a reason to beat them in the flour?

    If it's too sticky you can always work in more flour. I would say it should be a little more tacky rather than sticky. :)

    It depends how thick you make them. The boiling time can range anywhere from 5-15 minutes or even longer.

    Hi Marie! After kneading, the dough will need to rest for about 20 minutes. Once it's rested, the noodles are ready to be cut and used right away. 😊

    Do not salt your noodle dough. It makes the kneading process so much more difficult and results in noodles that are way to thick. Adam Ragusea just uploaded a video about why you should never salt your noodle dough but instead should salt the water when you cook them.

    Do you have that amazing KitchenAid behind you. There is a noodle attachment that is incredible. It will make the noodles skinny or wide. And you can cut them with scissors as it’s coming out of the attachment. To the link that you want to be

    your recipe states 310g of flour and the video cc states 250g. the 310g makes it crumply and need to almost double the water

    I'm sorry you had issues with the dough, Ron! 🙁 If you read the recipe, you'll notice that I start with the 250g and then add additional flour as needed until the right consistency is reached. You may not need the full 310g, and if you added all of the flour at once instead of adding it gradually, this is probably why you had trouble working the dough.

    Huh, yea. Followed your recipe to the tee! They sucked, didn't turn out. Did exactly what you did in the video, so there should have been no reason they turned out bad.

    Let's make "egg noodles". Start out with flour... Wait, what? "Egg noodles", therefore, is a misnomer. That's sad.
