How to make EASY Moroccan Potatoes PASTELS!
Moroccan cuisine is the core of my grass roots. I enjoy sharing my heritage with you through our love of food. I recently visited my cousin Audrey, a photographer living on the edge of Paris. No trip would be complete without a session in the kitchen. I was spoiled with the views from her apartment. The Eiffel tower on one side, the former Royal residence, Chateau of Vincennes on the other, which I was able to visit during my stay. Definitely one of the best views from any kitchen I have had the pleasure to cook in. Join me as we prepare a traditional dish, the delicious Moroccan Pastels(pastela) , so easy to make with so little ingredients.

Ingredients :
5 lb bag of Idaho potatoes
1 Can of tuna fish
Flour or potato starch (gluten free) to coat pastels
3 eggs
(2 tbsp finely chopped parsley or 1tbsp dry parsley)
Vegetable oil for frying
Salt & pepper
Instructions:
Put the potatoes with the skin into boiling salted water
and cook until fork tender.
Drain potatoes and put in colander let cool down
Peel the potatoes
In the meantime open theTuna add salt & pepper
Put potatoes back in pot mash until
soft add 1 egg salt & pepper
Make balls like size of golf balls and form into a bird nest,
fill with 1tbsp of minced tuna and cover with another bird-nest.
Pinch all around to close.
Pass them in flour or potato starch and in beaten eggs
(add a sprinkle of salt to eggs) and fry until golden.
Flip over and fry until golden on other side.
Drain on a paper towel.
Repeat the same procedure for the veggie pastels

I will try that sometime as it must be really tasty! Looks like the perfect thing to do with left-over mashed potatoes. You could add all kinds of leftovers and clean out the refrigerator.

Go ahead, it’s really easy and you can stuff it with a cube of cheese or meat ( prepared in advance )

Thank you ☺️ well tuna and if you do minced meat . you’ll have to cook the meat beforehand in the pan using a fork to make it like crumbs , add 1tbsp vinegar thyme S&P, cinnamon . When it’s cooked and dry, let it cool down. Continue from the feeling steps from the video 🥰

You can feel in with fish (not tuna ) and meat ( different pe preperations as you have to mince them and cook beforehand )and natural . can’t call it a cake as there is no flour in the mixture just purée and en egg but you don’t have to if you’re vegan. Do you use Idaho potatoes from the US in Moroccan Potatoes Pastels? Or do you get Idaho Potatoes that are not grown in the USA? I live near the Oregon border where they also grow a lot of potatoes. I will try this recipe with some Oregon potatoes in California Deena🥰 in rural northern California 🌻
