Ingredients:
2 1/4 cup of all-purpose flour (290 grams)
1/2 tbsp of salt (1 1/2 tsp.) (8.5 grams)
2 1/4 tsp. of active dry yeast (you can use instant) (6.5 grams)
2 tbsp. of white granulated sugar (25 grams)
1 cup of milk (ideally whole, but you can use 2% or 1%) (240 ml)
1 cup of unsalted butter (225 grams)
Please don't rely on my metric measurements, although I believe they are correct. You might want to double-check them if you use metric. :)
Egg Wash:
1 egg (beaten)
2 tsp. of milk

Wow! First time I made Croissants and a huge success! I used salted butter though, and didn't think to reduce the salt in the recipe but still a huge success! I will make this more often now. Thank you for sharing this recipe.

Hi Matt I made this about 4 years ago from an European Lady recipe, it was a mess not ez @all the dough did not strech ez and butter come out from all over my dough had some holes but I did put a lot of my effort and as the dough was cold and hard my hands real hurt me boy took 3 days to bake it was different to urs (harder); but what very delicious and crunchi so awesome that I was very proud of myself although they did not come out to be looking like croissant😂😂 but after that I had tried many times and never get that delicious taste of goodness ever again I had waste ingredients and if my first time did not come on so tasty I never will try so many times.... but You are indeed real cool ez going and I really hope I can get true and do it like yours... your cinamon recipe its the only recipe that I tried and come out so awesome that I never tried made other 1 and I had made that recipe from december last year several times and now every party I got invited they beg for them and I had shared ur video to many of my friends you are awesome so much thank u I will do u recipe and I really had faith that will come out good as yours, of course I will let u know😜 hugs My friend Matt God Bless u THANK U !!! Sometimes it just takes a little bit of patience and practice to get some of these recipes right, even with good instructions. :) Croissants do take some time, each individual step is pretty easy to do though. Haven't been brave enough to try these yet but after this I may just try it. I have made focaccia bread using 5 inch spring loaded pans. Another great bread for sandwiches like a muffaletta or a healthy smoked turkey. :)

Yes you should really try it! I bet you will be surprised how how easy they are to make, regardless of the time involved. But honestly most of the extra time is just time where the dough is chilling in the fridge, you can be doing other things while that happens. haha, my favorite is watching TV lol

I baked twice using this recipe. My first try was not so good, 50-50 I would say. But on the 2nd try, they were perfect. My go-to recipe now.

Your croissants look tempting making croissants is quite challenging due to its long process however I plan to do one of these days after setting my mind. However after initial proving the dough will prove croissants for 1/2 hour also will stuff with chocolate or cheese tks for the demo

Nice and lovely croissant, matt. Just wanna know, what kind of butter do you use? Looks like its flexible and easy to shape even in cold state..

thank you Farah! I just use the butter that is readily available at my super market - the brand is "Challenge Butter and comes from California". It you are in the States you can probably find it, but any good butter will work. :)
They did look amazing, Matt! Simply turned out superbly; huge, but superb. So, basically it's a puff pastry method for the dough, with added sugar? Very clever... :)

Hi Josephine! It winds up being 3 times. It can be four though. The folding is what causes the nice layers to form, and the chilling in the refrigerator makes the dough easier to roll out. :) Thanks for watching all the way in Qatar! :)

Thank you! So the chocolate croissant would be exactly the same thing. But instead of cutting them diagonal like at 13:08 you would just cut them across so it would be a rectangle, then place like part of chocolate bar on top and roll it up. Or you could still do it the diagonal way, and roll it up with the chocolate bar. Then once it bakes, just drizzle melted chocolate on top, and some powdered sugar....mmm yummy. haha :)

Hi Matt , you mentioned the milk should be heated up to 105 F , may I know can I just roughly heat the milk by cooking them in a pot ? Can it be just slight warm or it must be exact 105 F ? 🧐 thanksssss

It doesn't have to be exactly 105. Should be between 105 and 115 usually. When you touch it with your finger, it should feel really warm but not super duper hot. if that makes sense? :)
Hi Matt, looks like a good recipe with the lemon juice added. Do you think that a nine inch pie plate would work as well?

Sure Ben! wait was this comment meant to be on the cheese cake video? haha Yes totally for the cheese cake you can use a pie plate, although you will probably have some graham cracker base left over and possibly some filling as well. So what I recommend is just getting a muffin pan, if you have one and some paper cups and then make mini cheesecakes with the leftovers, if you wind up having some. Because of the nature of the pan a 9inch pie pan has a bit less surface area to fill then a spring form pan. At any rate, give it a shot and let me know how it goes! :)

Can i do the dough at night and cook the croissants in the morning ? Or keep the dough in the freezer for next two days exemple ?

Yes you can. :) In fact the last stage before you bake the croissants requires you to leave the dough in the fridge over night. :)
Ur video is superb, really help how to make a good crossaint at home. But my problem is, I always facing butter 'burst out' from the lamination when I roll it out. Leaked butter sticking on the table. Y ur dough look so smooth when rolling out.

Thank you so much! It sounds like maybe your butter wasn't cold enough? After you do a few folds for the first lamination, make sure to put it back in the fridge for 30 to 40 minutes so the butter cools down again. :) So glad you like it!

Yes you can use salted butter, if you do I would only add about half of the salt that the recipe calls for. I did it 4 times, but you can get away with 3. It doesn't have to be exact, the more you do it the more nice layers you will get. :)

In The Kitchen With Matt That's a lot of butter. Have to rely on metric as we r in Asia. What's your measurement in grams for 2 bars of your butter there ? We at Asia each bar is average at 220 - 250 grams . I always get confused when it come to cups measurement..lol. So, if 2 bars like that it would be almost 400 -500 grams.Hmmm?

2 bars here is 225 grams. So it looks like only one of your bars will work. :)
Hey Matt! I made these today and they turned out really good! They were very light and crisp. I love your recipes - so precise. However, while creating the layers, butter kept oozing out. They turned out fine in the end, but I don’t understand what went wrong.

Glad you made it!! :) The butter will ooze out if the dough is not kept cold. If your home is warmer in side, you may need to chill the dough longer and work a little faster, if that makes sense? But glad they still turned out. :)

Hi Matt: I made these croissants yesterday - O think my kitchen counter and whole kitchen was kind of hot the butter kind of came through the dough but continued. This morning I’m trying to roll out the dough but but my dough is hard it grew a little but not like in your video. What did I do wrong ? wIll wait for your response and try again next weekend. Thank you !

Hello Gina! Yes, it sounds like your house was a bit warm for the butter. It really needs to be cool when rolling. That is why you can only do one fold and then you need to place it back in the fridge to cool again, before turning and rolling again. so it needs to be done in stages. Did the dough rise well the first time?

In The Kitchen With Matt Yes the dough did rise--but did continue through the end and YES it came out delicious, had a little bit of trouble cutting the dough in triangles but nevertheless it was delicious.

matt can i use shortening instead of butter?and should the shortening be cold?

Hello, regular everyday shortening, like crisco that comes out of a tub won't work very well, but you can always try it. There is a specific kind that bakers use called "roll-in" or "pastry" shortening that works well. Not really a good substitute for butter when it comes to authentic croissants...sorry. But they will still turn out, just not as good. Yes it should be cold, the steps are the same as with butter.

Yes you can prepare the croissants and right after you shape them, you can cover them with plastic and put in the freezer. After they have frozen, you can transfer them to a freezer bag, and save for up to two months. :) When you are ready to bake them, just put them out on a tray again, cover loosely with plastic wrap and let proof for 12 hours. Then you can bake them.
Matt I made the croissants turned out pretty good I still need more practice

Hello, no sorry. Croissants have to have yeast in them. With that said you can make croissant shapes from homemade puff pastry dough instead. Watch this video for puff pastry kzread.info/dash/bejne/Z4h9ydivkdaagaw.html The taste will be different however. But still yummy.

Hi Leon, no sorry not really, the whole reason why Croissants turn out the way they do is because of the high butter content. Otherwise you won't get those coveted flaky layers. :)

Sure I can put pork chops on my list. I am not sure when I will get to it, I have many recipes on my list to do. haha but I will get to them eventually! :)
My thoughts, what if you rolled the layers out on a frozen cold cunter surface, to avoid all those 30 minute times in the refrigerator, get the layers all done save time, then put in the frig overnight .. rest, supper cold counter surface, just a thought, to save time

That could certainly work if you have a very cold counter surface, the dough will tell you if it needs to be chilled or not. Well not actually tell you, but you know what I mean. haha :)
