How to Make Corn Cob Jelly

Recipe
12 corn cobs free of kernels
4 cups of sugar
1 box of powdered pectin
Boil cobs in enough water to cover cobs for 10 minutes. Strain 4 cups of liquid.
Add the strained liquid back to the pan with one box of powdered pectin. Stir well to avoid clumping. Bring this mixture to a rolling boil. Add 4 cups of sugar at one time. Stir constantly and bring the mixture back to a rolling boil. Boil exactly 1 minute. Remove the mixture from heat. Skim foam if needed. Pour into jars to 1/4 inch headspace. Process half pints (jelly jars) for 10 minutes. Makes sure to make adjustments for your altitude if needed. Removes jars from canner after processing, and allow to cool for 24 hours without disturbing the jars.

    Trying a corn peeler and will make this with the Cobs. To feed the poultry do I need to cut th Cobbs up? Feeding the cobs to my turkeys.

    Made it and it turned out BEAUTIFUL!! Ty!!! 120 ears of corn resulted in 16 1/2 pints of jam and 8 pints of corn cob syrup ( of course the canned corn) …16 of that Mexican corn!!! The syrup is amazing… I was shocked how good it is!!!

    Hi, thank you for the recipe. I tried it today and it’s so liquidity. Did I do something wrong? I thought I followed the directions to a tee. It tastes great, just not setting.

    Oh no! Jelly is so finicky! For that reason, jellies are my least favorite things to make and can. Sometimes it's the wrong day of the season, the moon isn't aligned with Jupiter just right, and the monkeys aren't hanging in the trees just right. I would say absolutely don't bother the jars for at least 24 hours. Sometimes it takes a long time for the jelly to set. Disturbing the jars before then can cause the jelly to not set. I've never reprocessed jelly, but you can reprocess it with more pectin. Sometimes, if I am worried about something not setting, I will use 1/4 to 1/2 more of another package of pectin. I've never had this one not set, though. I sure hope this helps, and that your jelly sets up. Did the leftover jelly- the jelly on the sides and bottome- set up in the pan you made it in?

    It can be used for anything you would use other jellies for. We love it on toast, biscuits, and peanut butter and jelly sandwiches! Yum! It tastes like honey. I imagine it would also be good on pancakes, too. 😍

    You are very right that butter is said to help. I have tried butter in jelly recipes before, but I am pretty sure the amount isn't supposed to be more than one teaspoon. 🥰💜

    @@glendabenard3772 , mmm...I don't know that I would use it in place of honey for a couple reasons. The biggest is that if you use honey because it doesn't raise your blood sugar like regular sugar, this wouldn't work. There are also many health properties that come with raw honey. This will not have those. Also, this will not have that same rich consistency. If you just want the flavor of putting honey on a hot, buttered biscuit...Yes! This will absolutely work in place of honey! 😁🥰💜

    Just did this recipe and it's been cooling after canning for almost 4 hours and has not set at all. Still runny.😥

    Jellies are not my favorite thing to make for that very reason. They can be very finicky. That being said, if you disturb jellies before they have cooled for 24 hours, it increases the likelihood that they will not set at all. Sometimes, I will use a little extra pectin to help make sure the jelly will set. If yours doesn't set you can reprocess it, but I have never reprocessed failed jellies and don't have those instructions. I just use them as syrups. This would be amazing over hot biscuits, pancakes, or waffles. I am sorry your jelly hasn't set yet.

    Just a tip if you stir in a little piece of butter the foam will go away.

    @@karenclement7903 , thanks! I don't always use it since my jelly usually foams up anyway. 😆 I do sometimes keep using it in hopes that it will work one day. 🥰 I greatly appreciate the advice, though! The more people helping me, the better sometimes! ❤️
