You can make jelly from corncobs?! Appalachian Corncob Jelly Recipe

I saw this recipe in the Foxfire Book of Appalachian Cookery.
Was it worth the trouble?
Turns out, yes! And it wasn’t even that much trouble. All ya need is a box of SureJell. ☺️
12 corncobs (I used mine from making Corn Salsa)
Cover with water and boil for 30 minutes.
Strain.
For 3 cups of liquid, mix with 1 box of pectin.
Bring to a boil.
Add 3 cups sugar.
Boil for a minute.
Fill half pint jars, and process in water bath for 10 minutes.
It tasted like summertime fun. 😁 Imagine having a picnic by the creek while eating corn on the cob, and that’s the sunny taste ya get. 😋

    Thank you for making this video! I am making today, I canned 5 dozen ears and then made corn broth/stock. It was so good I am making more today along with the jelly! I love being able to make things out of the scraps and utilizing everything!

    I noticed that you had a video on making mimosa jelly a couple years back, but comments were turned off - I have a question regarding that jelly, as some folks have reported a possible allergic reaction to the bark and flowers of mimosa trees. Did anyone experience a burning sensation when eating the jelly? If so, could you recall the ratio of people that did or did not have that experience? I've been using our corn stover other ways, but jelly .. hmmm.
