Canning Corn and Corn Cob Jelly

This video was requested by one of my subscribers, bearzhere, because they don't make videos and wanted to share this recipe with all of you. The corn cob jelly is real good, it tastes similar to honey. The jelly is a USDA approved recipe. Here's the link:

    I saw someone ask about corn cob wine. My goal this year was to have as little waste as possible due to price increases. I canned my corn, made corn cob jelly, started some corn cob wine (which is brewing extremely well at this point), I am drying silks for medicinal tea, making a wreath out of the husks, gave the cobs to my chickens who loved them! LOL My next job is to collect all the cobs from the chickens to dry and use as firestarters. I am proud to say, corn has NO WASTE !!!

    I think you are awesome. when I lived in kanas like 30 years ago, I canned everything. if it grew on a tree or a vine it got canned. however I did the water bath method back then. it would take like foreverrrrr. but when it got cold and the roads were snow on....we had food. thanks for bringing such wonderful memories back.

    Thank you for the video. Folks need to know that a dry measuring cup of sugar is not quite the same as sugar placed in a liquid measuring cup as seen in the video, although in a jelly recipe the difference is probably not critical. Also, while the canning lids need to be prepared in simmering water, the canning rings or bands don't if they are clean. We made the corn cob jelly. Maybe because it looks so much like apple jelly it almost tasted like it.

    Great video! LOVE your southern accent, by the way. LOL! I don't like to eat a lot of corn, but a neighbor farmer gave us a load of sweet corn, and I hate to see food go to waste. My kids and hubby love corn. Honestly, I prefer frozen, but also like to not depend on freezers in a locale where sometimes our electricity is undependable. Very nicely done video. No annoying screaming music in the background, and you spoke clearly and didn't chat unnecessarily--but gave valid information.

    Okay Mom, I just made 11 half pints of the corn cob jelly. It looks just like yours so I must have done it right. I skimmed the foam off and put it in a bowl. While I was canning it was cooling. The jelly that came out with the foam was completely jelled and sure enough, it tastes a lot like honey. Thanks for the video. I love it !

    I love KZread, just surfing aimlessly from one interesting title to another, you sooner or later learn something new. Being European, where corn for human consumption isn't that high on the list, creamed corn is something exotic that isn't well known and corn jelly is something I've never heard about before, even so I constantly look around for new things I might one day try to at least sample once.

    I sure wish I had those gadgets this week I did it the old fashion way with a knife. You are diffidently my mom when it comes to canning and gardening:) Great lessons to pass down to my kids.I told my husband about the jelly so I'll be doing that too.

    We did mass production with that gadget . We put a board with a nails put thru it you lined up the ears of corn on the nails we had a plastic table cloth under to get any strays . We always had more than one person doing this . One put ears on one cleaned corn off and another to remove husks from nails, we also traded places so not one person was cleaning the corn all day.

    this is excellent... i made some corn chowder a couple weeks ago and thought about making corn cob jelly... had only heard of it and was not sure it would be worth the effort... but my guys LOVE honey so i see this one in my future... :-) love that gadget you got from the dollar tree!!! i am a gadget girt too... but you have me beat by a mile... tkx for the vid!

    thank you for another great video - that corn cob jelly I have heard of but never tried bet my hubby would like it - but mom you left out one important thing ------ a big ol' blob of butter on that toast seems like I come by your videos all the time and if I watched them before that's okay because you teach so much they are worth watching again

    Great video packed with information in a short amount of time. Your videos have more info in 10 minutes than others in 30 minutes or more. You do a great job of editing the videos to get to the point unlike others that drag along with so much impertinent info that's a known given to anyone that's ever canned anything and knows the basic rules. Keep up the good work as many learn much from your knowledge.

    since I've never pressure canned corn before, I'm going to follow your rules. only difference I'm not adding salt. I dehydrated some corn I had frozen that was in the freezer too long, and boy those came out tastey as a snack...lol

    Thank you for this video!! I canned 1dozen ears of corn & made this jelly 3 days ago ! The jelly is FANTASTIC!! We just got home from our local farm, with 4 dozen MORE ears of corn!! I got 11 half pints of jelly & 13 half pints of canned corn out of the first dozen! Busy canning week ahead!:-)

    You really did your homework on this video. Kudos! I absolutely agree.Those 12oz. jars are great for asparagus too. I don't often see corn cob jelly and I should have made some this year with my field corn and I bet the ears have dried down too much now. I'll have to go check.

    Have you tried canning whole-kernel corn in half-pint jars? And if so, what would the processing time be? Is it still 55 minutes? I came across a delicious-looking recipe for Chicken Barley Soup, and because of the differing processing times I wanted to experiment with canning it in three separate jars so that the softer veggies wouldn't turn to mush if I put everything into one jar. And yes, I realize I cannot can the barley. My thinking was when I wanted the soup, I'd empty one of each jar into a soup pot, add the barley at that time, and simmer for 10 minutes.

    +Bill Laut processing time for half pints is the same as for pints. Great idea about canning in three separate jars.

    I grew Hasting's Prolific field corn this summer but let it dry and shelled it off the cob for seed. So all of my cobs that I saved are white & dry. I do have this recipe for the corn cob jelly. However, the recipe that I have calls for bright red cobs. It is an old recipe. Also, I have a recipe for the corn cob syrup using bright red cobs. Now that would be interseting to see and taste!

    I'm probably a week or so away from picking the late corn. So I'll make sure the girls know about this recipe. If it tastes like honey, it'll be a good one. And since both my wife and her mom are "expert" canners, they'll probably do things differently. They don't seem to be too excited about my "youtube suggestions", LOL Which means, no Mom... but I'd be happy to have ya for a sister ! :-)

    thank you i will be making both those i made some apple jelly few weeks ago with frozen apple juice and it taste like honey. Its not the first time i have made apple jelly that way so i don't know what i did different but everyone likes it so that is what counts again thank you for sharing :-)

    I ended up with some wide mouthed jars that were about the size of a quart. actual canning jars with marks on the side for 'fill to here if you plan to freeze it' good looking jars. when I get the pickled peppers out of one of them it is sure to become my iced tea glass.

    I have seen a couple of videos using this corn remover. The simplest, I feel, was one that showed a 3" galvinized nail through a 2x3 piece of wood, with the cob thrust down lengthwise onto the nail. The corn remover easily removed the corn, end of story. How fun was that?!?

    gotcha, usually the tried and true way is the best, imo. so, all it takes is a little bigger pot for both the rings and lids...easy enough to do. Hey, we're getting close to identifying the mushrooms... MiWilderness is waiting on the spore test, but it's looking like they MIGHT be edible~!! fingers crossed!     I've only got 7 ears of corn so I'm making a half batch. I'll be canning in half pints following the same directions. I haven't had corncob jelly in years! I'm not sure if I'll can the kernels or make fried corn. I'll probably can it in half pints to use in recipes that call for 1 cup of corn.

    I have always frozen my corn and never tried to can it but I think I will try pressure canning it this year, thanks in part to your video! I appreciate the information. I have heard/read that canned corn tends to go sour after a while, my question is, how long will canned corn last?

    I had never heard of cob jelly till your video. Plan to make this in a few days.After I cut the whole corn off cob do I leave juice or corn milk with the cobs when making jelly or do I juice the cobs before boiling them? Thanks

    A lot of folks have trouble canning corn. Corn seems innocent enough but it's a peculiar thing. Doing it this way hasn't failed me yet.

    Great info on canning corn. That's the first time I've actually seen corncob jelly made. Looks yummy! Would it be any good with a bit of cinnamon or cloves if you wanted to punch it up a bit? Is that a no-no?

    Ha! Okay, I will boil the rings. SOMEONE needs to keep me in line. My poor husband has a hard time with it. And, no, we have very few earthquakes here in the Sacramento California area. In fact, I have lived in Northern California all my life and have only felt two. Your two new "granddaughters" say "hello" and "that jelly looks weird". teehee

    Trying to understand, recipe says one should have 3 cups juice, another on you tube had 3 cups and you had 6 cups.Did u leave lid on pan when boiling cobs and turn heat down to where it's just boiling or leave on high the whole time? If I end up with 3 cups can I add 3 cups water to that? Would like to make more than 3 half pints.

    Land to mercy! I don't know who ever taught you all how to make corn cob jelly but REAL corn cob jelly is made with the red cobs of field corn after you get done shelling the corn for feed or to grind for cornmeal, not from fresh cobs from sweet corn. Go find youall a farmer that raises corn. Shell off the corn, rinse the dry red cobs, and then fill a kettle with them, cover with water, and boil. The lovely rosy red will come out of the cobs and color the water. Take that water and run through a cloth to remove any redeye from the cobs. Then use that water to make real corn cob jelly that has a lovely red color and both looks and tastes like apple jelly. Wow, who'd have thunk of using sweet corn cobs. No wonder your jelly so pale. Truth is, you could take plain water and add sugar and boil it down and get jelly. Here's one for you, take dandelion blooms and cover with water and boil. They make a right tasty jelly that looks like you alls so called corn cob jelly.

    planning to make the corn cobb jelly but noticed your instructions in the video differed from the recipe, i.e., you doubled all ingredients except the corn. Could you please clarify. I looked thru comments but couldnt find any info relating to this. Thank you.
