How to Make CHICKEN PARMIGIANA Like an Italian

Chicken parmigiana can be likened to Italian crumbed chicken with toppings, typically including cheese and tomato sauce, but is it Italian? NO! This is a dish which has become famous over the world and many mistaken it for being authentic but most variations are pretty un-Italian! Except, maybe, my one. As an Italian I have recreated this pub-classic with delicious authentic ingredients and believe me there is no going past this recipe for a cheesy chicken stack that is smothered in rich tomato and basil sauce. I even have two options for cheese on top, would you prefer buffalo mozzarella or burrata? Either way you will never order this out again. It might not be authentic, but I’ve created a Chicken Parmigiana that even my family would enjoy.

Never tried either. I've made my own Mozz but have wanted to try Buffalo. Will also try Burrata while I'm there. Wegmans is sure to have both.

i would probably prefer it plain, without cheese on top, maybe some of the sauce on the side. So you can scoop some up with the chicken, and reducing the chance of the breading getting a little soggy. Good job though.
My tastebuds say I CANNOT wait for this! Must eat that now! This is going to be next on my list to try and copy! Can’t wait Vincenzo!

Made it today for my wife and Mom in law. They couldn’t believe it! Was the best they had ever had, kept sayin in it over and over! Only thing I couldn’t find was sunflower oil but I did a combination of olive oil and vegetable oil with a little bit of avocado oil came out perfect! Used Buffalo mozzarella everyone was out of burrata, They must’ve watched this video! This is my third recipe I’ve gotten from Vincenzo every one has been epic!

@@vincenzosplate no and I appreciate it as an Italian-American, like I was pretty surprised by your chicken pasta recipe since that's exactly how my Nonna made it, how my Uncle makes it, and how I make it today. So showing these dishes created by the diaspora but keeping to the roots of Italian cooking is very important and a good way to experiment.

I love that there are different influences and room for experimentation. Happy to see that although this dish is not authentically Italian in origin, it can be made to follow the rules of the Italian kitchen.

I always learned from my Neapolitan friends to only use Buffalo Mozzarella or Burrata and not the fake stuff. We got some good Italian shops here in Amsterdam

Hi Chef, my cheese seller had some Buratina which I didnt know about, it's supposed to be burrata but creamier, I think It could go well on this dish instead of a creamy salad. Unless it's not recommended.

I'm lactose intolerant, so the fresh cheese is going to do bad things to my innards... Got any suggestions for some other cheeses I can use instead of milky mozzarella?

The rule is chicken and pasta are never together.

I see a couple people here saying "no pasta," but it is an Italian-American dish, so traditionally you would serve it with pasta, as a side dish. Spaghetti is typical, but whatever you like is fine. But this is the important part - for traditional Parmigiana, it MUST be a light sauce like Vincenzo made here. This is not the time to use your left over Sunday Gravy, lol. The tomato sauce must be light and simple. You use some on the bottom of the baking pan (assuming you're making a larger quantity), but only a little bit - don't let it cover the chicken. Put it under the broiler until the cheese melts like Vincenzo did, then you have the extra sauce in the pot you can put on your pasta, as a side dish. Grate more parmigiano reggiano over all.

Eat it however you want, but I don't like the idea of carbs on carbs. The chicken already has breadcrumbs on it (carbs) and you are adding more carbs to it with your pasta. I would much rather eat it with vegetables.

@@greenblack6552 If you want veggies as a side, the best choices are probably roasted zucchini or sautéed spinach. But you still shouldn't skip the salad. A green salad or some other kind of light antipasto is traditional with chicken Parmigiana.
