I'm glad when I was a boy and we got a cow tongue my parents didn't tell me what it was because the TASTE is GLLLORIOUS! Best texture, swimming in lime, cilantro and onion on some steamy corn tortillas.

I do mine almost the same way, except I'm lazy and do it in the crock pot. I use the chiles and since I'm from Texas, I put a little bit of comino in mine. I didn't tell my husband or kids that it was tongue and they gobbled it up and told me how much they LOVED it, when I told them it was tongue, they just about died. I would make it more often, but it is so expensive here in Hawaii, about $25. for one tongue. I can find it in the Filipino markets, but the good organic grass fed ones are sold exclusively to Hotels and high end restaurants. Back in the day, it was poor mans food, my grandma made it. about once a month....

haha my wife didnt want to try it but she ended up loving it. The price here is about the same depending on the weight i usually go for the heavier size. My mom actually makes it on the crockpot sometimes as well and its just as great. Im glad you watched my video and i appreciate you commenting and letting me know your story.

I always braised mine like you in the past, but I fry them a bit before serving them up to give that little bit of char I love - and lengua is so damn rich and juicy even those small pieces take that char like a champ. I've got 6lbs of lengua in the crockpot RIGHT NOW. Can't wait for tomorrow. :)

If anyone raises beef in your area and you can go in on like an 1/8 (quarter of a side of beef) it's great and way cheaper. Often when we do it that way we get liver, heart and tongue FREE because no one else usually wants them! Weirdos. Fine by me.

Hi Tasha ! Me and you both . I'm 22 and my husband and I have a 3 year old. When I moved in with him I knew nothing I was about 19 when I moved in with him and his family. It was so embarrassing to cook because I knew that I didn't know anything about cooking. The first time I ever marinated or tried to cook meat for tacos I heard one of my husband's younger brothers say in Spanish, "Ewe what is that smell, It smells like poop!" I was so embarrassed to cook. My husband suffered a lot because my food tasted horrible. His mom cooked just the most delicious food I have ever had. She taught me most of what I know like how to refry beans with an authentic taste and how to even make beans very soft whether boiled or in the crock pot. I absolutely love food and it's only fair to my husband and especially my son that I cook and know how to cook. My husband has faith in my cooking now which is why I'm here watching this video, We bought tounge yesterday because he wants me to try to make it. I've gained a lot more experience also from YT and videos for cooking. My husband grew up with great taste in food because his mom cooks amazing food. I'm glad I gained a taste in authentic Mexican food. If someone had told me 4 years ago that I'd be cooking bomb food I would laugh at you! I've also learned so much Spanish. My dad is from Zacatecas and my mom is white so I do have some Mexican running through my veins. I'm glad us gringas can learn these amazing Mexican dishes !

I'm definitely going to try this recipe, I feel bad asking for lengua every weekend when we come over. She's already taught me a bit of her tortilla making process so I'll surprise her with this! Just have to find out where she gets the tongue. Should be able to find one since we're in Iowa

Se ven riquisimos! Gracias por el video. I'll be cooking this in a few days--- did you just use the braising liquid at the end to pour over the tacos?

Had to watch your video again. I'll be making next week. I'm glad I already had the beef tongue. The price has sky rocketed. I received the dried chili from Amazon today. Can't wait. Thanks again.

I smoked lengua after brining. Peel after brine then smoke on mesquite or hickory for 2 hours just subtract 1 hour from brine time. Experiment was a success. I love your tutorial!

Yuma AZ brought me here!!!!!!! I am from Philadelphia, but I was stationed in Yuma AZ at the Marine Base. Before Mexico was considered off limits, every Thursday thru Sunday me and my Marine Corps brothers would head down to San Luis Mexico for the clubs, and of course the tacos. Well, Carne Asada, and Al Pastor were my absolute favorites, one day, my friend Josè said "let's try this taco stand over here". He didn't tell us, he already had been there before. He ordered for us. After eating about 7 tacos I asked " wow, these are bangin, but they are different what is in their recipe?" Josè looked at us all with a devilish smile and said "you like them right? So you can't even be mad that its cow tongue". Naturally, the knee jerk reaction is to get pissed, but amazingly, I didn't, I fell in love. But I did however learn to speak Spanish just so I would know what was being said moving forward. That was 16yrs ago, and here I am about to make my own for the first time thanks to this video. Gracias hermano
