My BEST TACO de Lengua in Southern California is from La Takiza in Vista California.
Here they cook the beef tongue meat low and slow for 3-4 hours. Then they finish it off in the steamer before slicing it thick and juicy! It's like a tongue steak! It's all about the technique. There's only one thing, you need to prepare it with onions, cilantro, lime, a little bit of salt and salsa. THE GREEN SALSA!

Drove all the way to Vista and was disappointed they diced the lengua it was not even sliced like the video. It was very underwhelming I could find better lengua at the local taco stand.
place sucks drove over an hour. 👎🏽 lengua was chopped up not like the video said they don’t do that here. Very disappointing.
