How to make an Apple and Ginger Chutney
Тәжірибелік нұсқаулар және стиль
Got Wind Fall autumn apples needing to be used? Then here is a really lovely punchy chutney, as Jamie Oliver would say, ‘it has a kick’. You can make it less punchy by halving the cayenne pepper.
This is what you need:
- 1 kg of cooking apples chopped
- 3 chopped onions
- 2 cloves of garlic - finely chopped
- 2” peeled and grated fresh ginger or use 2 tbsp preserved ginger or 1 tbsp powdered ginger
- Handful of sultanas, current, raisins, dates
- 1 ½ cups sugar - any will do
- 1 tsp each of mustard, mixed spice, cayenne pepper - if you don’t want it too punchy, add half this amount, salt.
Put all ingredients into a large pot.
Cover with vinegar, bring to the boil, reduce heat and allow to gently simmer for 45 or so minutes, stirring often until thick.
Place into hot sterilised jars, lid, label and dress as you wish to either present as gifts or line your pantry. This is delicious with cheese and crackers!

Thank you for the recipe Astar. I just had to giggle watching you pour your ingredients and fill your jars. I'm glad you didn't edit that out.

Thank you. This looks lovely. I've still got loads of apples on my trees so I'm going to five this a go.

You brighten my day every time I pop in! Love a good chutney. Toasted bagel, chutney, ham, artichoke hearts, and jarlesberg. (Every visit to Tassie this is my go-to choice at the local deli.) Kind regards from the US, Diane 💖🌎🌟

Yay June, you are going to love love love making chutneys and pickles. Don't add to much liquid. It's a play it by eye. There should be sufficient juice to come out of the fruit. Usually I kinda cover the fruit.
In the description recipe, you mention reducing the cayenne pepper but, the recipe following does not list the cayenne at all. Please inform me/us as to the original amount of cayenne you are referring to. Thank you 🙏

Hello hello hello, honestly I made a wee mistake. I used 1 tsp cayenne pepper. Sorry, Astar
Beautiful video.. beautiful recipe.. and you are beautiful too.. Just one worry.. using a wet spoon or wet lids/ jars would reduce the shelf life n cause it rot faster..
Are they not better when left fot a few months as flavours mature?
