HOW TO ALMOND BUTTER RECIPE
3 cups almonds
1/4 tsp kosher sea salt (optional)
Pre heat oven to 250.
Place almonds on a rimmed baking sheet and warm in the oven for 12-15 minutes. If you want a roasted flavor, leave the almonds in the oven a little longer until they are warm and golden brown.
*note: you can skip this step but I find the warm almonds turn into almond butter faster then room temperature almonds, so I prefer to start with them warm.
Place warmed almonds into your food processor and pulse a few times until the almonds have begun to break down. Then let the processor run, stopping whenever you need to scrape the almonds off the sides of the processor.
Once the old release from the almonds it will become very smooth and creamy. This is what you are looking for. Be patient, it can take anywhere between 15-25 minutes.
Makes 1.5 cups of almond butter.

Ok, I just jarred my first batch! I'm about to start buttering every nut I can find that isn't nailed down. No nut left behind! The hardest part of making this butter, was scraping off the blades of the food processor... didn't want to waste a single drop! :) The only thing I did differently was to roast the almonds in an air fryer (6 minutes at 360*F). Ooh, and one last note of interest. The friction from processing so long warmed the butter ever so slightly, but enough to generate some steam. I didn't ruin it, did I?

While we're talking about butters, if you're not aware, you can process heavy whipping cream into real homemade butter! Add salt to taste half-way through. Can also add savory seasonings as desired. Total time is about 8 mins.. give or take..

You don’t even need the olive oil. A Vitamix or other high speed blender makes almond butter fast. I make it all the time. I roast my almonds a bit darker but regardless, you don’t need added oil at all. I use 3 cups of roasted almonds and 1/2tsp of sea salt. Fills a 16oz Mason jar perfectly.

Clean & Delicious How do we do it in the Vitamix as it will definitely get hot and start to cook? Are we to reduce the blend time as the Vitamix is so powerful and how long would you suggest we blend it for? If it does get hot, how do you suggest we cool it back down? I am really interested to know as I have a Vitamix and would love to make it in there.

Do you not soak the almonds overnight and peel the skins off first? I thought the skins contain tannin, which inhibits the absorption of vitamins and minerals into your blood. My grandmother always used to blanch almonds by soaking them in boiled water for 10 mins, then I used to skin them. She used the almonds to make almond milk. Do you not at least wash the almonds?

Roasting the nuts before grinding will also help decrease the oxalate content which can cause inflammation and tummy troubles in certain individuals who are sensitive to it. They can also cause kidney stones if you're prone to them. Remember that when buying nuts, butters, or oils: roasted is better.
