How to make acorn bread

Recipe Ingredients:
Coconut oil
3 large eggs
1 cup persimmon puree (banana or pumpkin can be substituted)
3* tbsp maple syrup (add more for increased sweetness)
1 tbsp vanilla extra
1 tablespoon of ground cinnamon
½-1 tsp of allspice
½-1 tsp of nutmeg
1.5 cups of finely ground acorn flour
½ cups of rice flour
½ tsp Xanthan gum
¼ tsp kosher salt
1 tsp baking soda
¼ tsp of baking powder

My acorn bread was good but not sweet. I used 2 cups fresh acorn flour, 1 cup fresh oat flour, 1/2 cup fresh flax flour, Fresh Chopped home grown English walnuts and a hand full of dried cranberry. A bit of yeast mixed together. I kneaded the bread for about 10 minutes then let rise in a warm place over night. I split the dough and then let rise for another 2 hours and then split the tops and put in the oven. It was dark just like yours but much heavier. Yeast did little to make the breads fluffy. It was heavy but real good with hot butter. I have enough to do another two loafs of bread. I'll do more next year. Acorn bread for Christmas this year. :)

Sounds delicious! I love the addition of walnuts and cranberries. Yeah the yeast doesn’t have any gluten to work with so it has difficulty rising, we experienced that as well. The Xanthan gum actually helps with the rise too because it kind of substitutes the action of gluten.

Just made some of this with fresh pumpkin. Even with 4 tablespoons of maple syrup it didn't have sweetness to it at all. It also came out a little on the dry side. Thinking next time might had some sugar and maybe reduce the amount of rice flour in it. Also might add honey.

When I was a little girl I read My side of the mountain and made my own acorn flour like he did, but I didn't know how to get the tannins out, so never ate it. This was great. Looks very time consuming, but definitely doable.

Just made mine today!!! Was good. Nutty but bread. Next time I won’t do the all spice but it’s a hit at my house!

Yep! The rice flour isn't a requirement. We just found that without it due to the overall high protein content of acorn flour the bread turned out a bit gummy. Feel free to adapt and let us know how it turns out!

Is there anything you might recommend to sub for eggs? I don't know if it's possible but I was thinking of applesauce or flaxmeal (not ideal for me but don't know if it would be better). Would love ideas. Also, thank you for not making a bread loaded with sugar (odd, that's common, I need to heal from mold issues). I probably would need to sub out the rice flour, would quinoa flour be okay? Thank you for being brave enough to embrace the 'wild'. :D
Oooooooo... I bet some fresh cranberries thrown in just before turning it into the bread pan would be just freakin' dandy!!

Native Americans that used this same recipe, would carry it for months in a woven basket while migrating across the great plains.

Nice, but if you’re in survival mode and don’t have all those niceties like baking soda and vanilla extract. Are there recipes that are very simple and good? 100% foraged.

Why doesn't it mold during leaching?

I think changing the water so frequently stops mold fairly well. I've actually had batches start to ferment on me though which isn't an issue. You can always leach in the fridge to prevent that.
Is there another kind of flour I can use besides rice flour? I'm allergic to rice,oats, and wheat

Yes, I would imagine you could substitute that for any flour, or leave it out entirely. To keep it turning out like how ours was, you’d be looking for any low-protein flour.

Yes! They certainly can be. Burr oak is one of my absolute favorites because of the MASSIVE acorns it produces. I wish I had more near me. :D

😮 all acorns are eatible some are better some are easier to process or require more work I always eat s few raw to test how to processing them for easiest methods eventually I'm able to eat things others can't I now eat roadkill drink river waters and have no Dr or medicine at 75 go at your own pacey friend lol

In the myth about Perseus, the guy who kills Medusa etc; it's said he was told by The Oracle of Delphi to go to a land where they didn't make bread from wheat. So, he went to a land with many oak trees, where the people made bread from acorns. So, if the myth has any truths in reality, then acorn bread is a very ancient recipe.

So, what I understand is locally foraged acorns only become edible after undergoing a deluge of water and only if mixed with processed xanthan gum and baking soda, imported and solvent extracted vanilla extract, imported spices, processed rice flour and you use chemically refined fat in a spray can and industrially made parchment paper. In the end doesn't simple wheat flour have some merits too ? It does not seem to rely on this much additives to make a convincing feed. And don't get me started on the food safety aspects if you use non-chlorinated water for the days-long ambient temperature leaching process.
Love the series though. But at the end, I feel like it's a ...pity.

Hard to describe for me I’m afraid! The consistency is similar to that of almond flour. It’s kind of like whole wheat but with a “nutty” flavor.
