How to Make A Tomato Pie

Made with lots of cheese and basil, Mr. Bucky thinks this pie is a winner. I actually liked it too.
Ingredients:
1 pie crust. (See this video for an easy pie crust recipe: • Simple Pie Crust )
4 large tomatoes, peeled, sliced 1/4 inch thick, and cored (see this video for an easy way to peel tomatoes: • Quick Way to Peel Toma... )
2 cups shredded mozzarella cheese
1 cup shredded sharp cheddar cheese
1/2 cup parmesan cheese
1/2 cup mayonnaise
2 tablespoons flour
2 eggs
1-2 tablespoons dried basil
2 teaspoons of salt (for sweating the tomatoes)
Directions:
1. Pre-cook pie crust at 350F for 15 minutes. Remove from oven and, while still warm, add 1 cup of the mozzarella cheese to the bottom of the pie crust and spread evenly. Add the parmesan cheese to the top of this and spread evenly.
2. You'll want to "sweat" the tomatoes to remove as much water as you can (so your pie crust doesn't get soggy). Put the sliced tomatoes on a towel or several layers of paper towels and sprinkle with salt. Let rest for 15-20 minutes and then dab dry with a paper towel.
3. Line the pie crust with the sliced tomatoes and then sprinkle with the dried basil.
4. In a separate mixing bowl, mix the mayonnaise and flour together. Add the 2 eggs and stir until mixed evenly. Add the remaining cup of mozzarella and the cheddar cheeses and mix together. Pour this mixture over the tomatoes and spread evenly.
5. Cook at 350F for 35-40 minutes.
6. Let it cool 30 minutes before cutting and serving.

My goodness, I found this dear soul after she crossed over and I didn’t realize it until I saw a video her Son posted. She gave me and I know countless people comfort. I am making this for my in laws for their first dinner at our house. I hope she would be flattered. 💖 We sure do miss her in body, but we are so thankful she gifted us with her love for good food. Our bellies and our hearts are still being filled by Mrs. Phyllis. 💖

I always wondered where they ate their meals (only saw their plates on the counter, not at a table) and now I know. Mr Buckey likes his recliner and they must have watched TV while they dined. Reminds me of my dad!💕
If ever anyone could inspire me to try and make my own pie crust (AND go out and buy a container of Crisco) it’s going to be this woman.

Hello Phyllis, I used this recipe to make a tomato pie after watching it and it turned out beautiful and delicious! I used Parmigiano Reggiano and Gruyere cheeses instead of the cheese in the recipe. Everyone loved this recipe. Thank you for sharing, this is for sure a tried and true recipe!

Keep The Change Mr. Bucky passed last July. Phyllis came downstairs to start breakfast and Mr. Bucky was in his chair. After a few minutes she realized something was wrong. He peacefully passed. About 6 months later Phyllis passed from cancer. 💔💔

Mr.Bucky finally got that tomato pie he's been asking for! You're so good together. Wow I've sure become a fan fast. I was born in 1953 and so much of what you do is nostalgic for me. I love your fun relationship and your realness as a person/woman. So refreshing. Oh! And this tomato pie sounds REALLY good!

My wife Carolyn, North Carolina born and bred, and I grow our own Kale here in Winston-Salem and she's always looking for kale recipes. I really appreciate your showing how to make a great pie crust without unnecessary complications. As for myself, I was conceived in Augusta, Georgia, born in Brooklyn and raised on Long Island but was blessed when the Army brought me to Texas where I first discovered entered the United States. Too many years later, after being saved at a Billy Graham crusade and at the first opportunity, I moved back to the United States where I became a Southern Baptist, met my wife and have lived the good life for nearly 25 years. Thank God for good southern women.

She was beautiful and such a wonderful cook. Look at how she did that with that saran wrap and it didn't all wind up in a twisted mess whilst she was working with it. She was such a lady and graced by God. Now if I did it I'd be 15 minutes in and half the roll gone and it would be in a twisted sista pile alongside the pie as I toss it aside and just muddle thru. JS. Gonna miss you so Phyllis. You just might of made a lady outta me.
Hmmmm....I bet just a little feta and fresh baby spinach would be lovely. I'm definitely going to try this recipe in the summer. I just love tomatoes. Slice them and make a sandwich with them🤗🤗

Phyllis, I'm commenting 12 into the video. My mom used to make pie crusts back in the 70's and 80's for her pies but, now she buys her pie crust. Wish we could go back in time to the good old days. Now I'm going to finish watching your video.
I made this right after watching Phyllis make it about 2 or 3 years ago. It is absolutely delicious and I can't wait for my 'real' tomatoes to get ready. I love you and miss you Phyllis and Mr. Bucky. You're a part of my heart!
I've made tomato pie before and just loved it but the crust was soggy! Thanks for the fabulous tip of the cheese on the bottom. I used homegrown tomatoes from my little herb garden and fresh basil. It took almost all of my tomatoes and basil but was SOOOO worth it. The recipe I had before coming here called for the addition of bacon pieces too!!! Yum - who doesn't love that. But I'll be taking out the additional juice of the tomatoes as you do here and prebaking the crust and using the cheese as a liner to keep it crispy! Thanks for a great recipe. All my neighbors loved the last pie - they're all going to freak when the taste the next one with your great tips!!! Thanks so much - RIP

*FRENCH STRAWBERRY GLACé PIE* _Substitute 6 cups sliced peeled fresh peaches for the strawberries._ _Substitute 6 cups fresh raspberries for the strawberries._ _Substitute 6 cups fresh blueberries for the strawberries._ *Crust:* 1 box Pillsbury™ refrigerated pie crusts, softened as directed on box. (Or use your favorite recipe) *Filling:* 3 pints (6 cups) fresh strawberries 3 ounces Cream Cheese 1 cup sugar 3 tablespoons cornstarch ½ cup water-optional Topping: 1 cup sweetened whipped cream-optional Heat oven to 450°F. Bake pie crust as directed on box for One-Crust Baked Shell, using 9-inch glass pie plate. Cool completely on cooling rack, about 15 minutes. Meanwhile, in small bowl, crush enough strawberries to make 1 cup. In 2-quart saucepan, mix sugar and cornstarch; stir in crushed strawberries and water. Cook, stirring constantly, until mixture boils and thickens. Cool completely, about 30 minutes. Spread softened cream cheese over bottom of cooled pie shell. Place remaining strawberries, whole or sliced, in cooled baked shell. Pour cooked strawberry mixture evenly over berries. Refrigerate until set, about 3 hours, before serving. Just before serving, top pie with sweetened whipped cream. Cover and refrigerate any remaining pie.
2/1/20: I think I watched this video in 2016, and vaguely remembered this dish from years ago and since our tomato garden was in, what better time to make it! It was beyond delicious and my husband loved it! I made 2 and took one to my cousin and her husband. Needless to say it was a big hit! We all have a treasure trove of wonderful dishes to choose from and every time we fix one, Phyllis and Mr. Bucky will be with us!

Hello Mrs Phyllis! I came across this recipe for your Tomato pie I have almost the same recipe! In my recipe the tomatoes are cut into wedges and the basil leaves are chopped fine and mixed with 2 garlic cloves that are also minced fine and there is no flour with the mayo just the parmesan cheese. The addition of the garlic really adds a great flavor to the pie. This is one of my favorite recipes to make in the summer when the tomatoes come into season. I’m a huge garlic fan so it goes in pretty much everything! So I’ll add your little addition and tweak it just a tad. It’s heaven on a fork! Love watching this lady cook. Her recipes are very similar to my deceased Mother and I loved cooking with my mom! There’s no substitute for Cisco or Lard!
PS I just tried this recipe last night and both my husband and I LOVE IT! Will be making it again, thanks again for your awesome recipes!

I've been watching your tutorials after spotting your lime jello recipe. I think I have become a bit of a follower. Really liking your no fuss attitude towards baking. Just one problem...I'm always starving after watching what you make. I'm from the UK and some ingredients you use aren't available here. Or are sold under different names. Not to be morbid but he even seems to have died the kind of death most of us wish we could have died.... he was just sleeping in a chair and when she looked in at him a little while later he had a slight smile on his face.... but she somehow knew he was dead . RIP Mr. Bucky and Phyllis

I love your videos on cooking. Its like being with my Mom in the kitchen again. (I miss her terribly) So THANK YOU Phyllis for being there, when I need Mama that cooks. I think you are very calming to my soul... I wish I could give you a great big hug! ... I grow my own tomatoes that are so delicious .... sadly the tomato season is over.
