How to Make a Sponge Cake | FRUIT CAKE

Hey guys!
I have been getting a lot of requests of how I make my vanilla sponge cake (the general recipe, not the other flavored ones). I finally made a video! And showed you guys how I make it into a delicious fruit cake! Unlike other sponge cakes, this recipe has more oil and milk content which makes it a little less "spongey." However, I feel like most sponge cakes are a little on the dry side. So, I added some liquid ingredients to make it more moist. This is the perfect fluffy, moist cake and everyone who tries it loves it!

1 3/4 cup sugar
8 eggs yolks
8 egg whites
1 teaspoon cream of tartar
2 cups cake flour
2 teaspoon baking powder
2/3 cup oil
2/3 cup milk

    I made this yesterday! Everyone loved it! I followed the recipe but I put my batter in two 9 x 3 inch round pans and adjusted the time. They came out perfect! Soft and cloudy. The texture is so soft it kinda has the same texture as Brazo de Mercedes but better because there is actual cake you can bite into! This is the best cake I've made so far! Though I don't have much experience in baking and failed a sponge cake just the other day 😂 Actually, I've been looking for a good sponge cake recipe on youtube but most of them use the cake bath method where they put hot water in a tray, put their cake tins in them and cook in a low temperature. Their cakes turned out how I wanted mine, very fluffy sponge, but I just didn't want to use water + they require longer cooking time due to the low temp. Anyway! What made me use this recipe was when I saw how fluffy your sponge cupcakes were! Thanks for this recipe Jovina! I think I found my staple sponge cake recipe!

That failed sponge cake I baked the other day made me feel really disheartened, but thanks to the success of this bake I feel like I have restored my confidence in baking 😄 I didn't know it would be possible for me to bake such a good fluffy and moist cake 😭 It is just sooooooo good!!!!     @@jiminshighnote I haven't tried it cause i usually love a non-sponge chocolate cake, but i would do like 1/2 cup cocoa powder and take away 1/2 cup cake flour

    @EeeyyyMayyy Y I baked mine at 175C for the first 15 minutes then 160C for 20 minutes. Actually towards the end I lowered the temp a bit from 160C to 150C and baked them 10-15 minutes longer. I panicked a bit when the cakes split a little on top but I guess it was supposed to do that (Jovina's cake also has a little split on top). For the second time I made the cake, 175C for 15 minutes then I lowered it to 150-155C and baked it longer. The crumb/crust on top was softer compared to my first bake. It was soft that I didn't have to trim the crust off. However I think the first bake was a little bit fluffier than my second bake. I think next time I would stick to Jovina's recipe :)

    You are welcome! I have young kids so I usually am not lucky enough to have enough time to do everything at one time. So I usually bake my cake earlier the day. Middle of the day I probably make my jam and diced my fruits. At night when the kids are settled or in bed, then I make the cake. It's a process! Lol

    Hello! The cake is soft so you would have to be careful stacking it. I wouldn't recommend it though people has done it before.

    You are welcome! Honestly, every oven is different so you have to just experiment and see what works best for you. I would do 350 for 15 mins then 325 until it is cooked (when toothpick poked into the cake comes out dry). Maybe about another 15 min-ish

    I made this tonight and they all collapsed and deflated. They were definitely cooked and the parts that didn’t collapse was the perfect texture. How long did you cool upside down before removing the pan and peeling off the parchment?

    Yes, definitely possible! You probably have to double the recipe. I am not 100% sure exactly how much you need but I am thinking double. 😊

    I always make it a day ahead the earliest. Just make sure you keep it covered and refrigerated.

    It doesn't matter as long as it is cake flour. I usually buy it from the bulk bin at Winco, but have tried the one from Walmart as well.

    What if u want to make it fluffy’? And how do u make whip cream to not flatten iver night ? How do you make whipe cream not have a freezer after taste when u leave it covered in the fridge over night before decorating?

    The cake is the fluffiest when fresh baked . My whipped cream is almost always good the next day staying in the fridge. In fact, I usually make most of my desserts the night before.

    Hi! Approximately 15 min on 350F and then reduce temp to 15-20 min on 325F. I am not 100% sure but I would just started checking the cake after 25 mins

    Yes. Just covered in saran wrap to keep it from drying out

    2. A crumb coat then another coat over to cover the crumb coat.

    It is stunning! your cake is like a piece of art. Thank you for sharing. I don't need to buy the cake from store anymore. homemade is always better. it has more fresh fruit and we know the ingredients in the cake for the family. Also, I visited many stores, and I could not find the piping tip ATECO 858. May I ask where you get yours, please? Thank you in advance. :)

    Can you bake in 8X8 pan, or round pan? How will the recipe change baking time?

    Yes you can. I bake this recipe in 2 8-inch rounds. Approximately 300degreesF for 15 mins theb 325 until cooked through (I can't remember how long, around another 10-20 mins, I just check as it gets closer to being cooked)

    I have tried several ones and honestly have not noticed any big differences. I got a large bag from my local grocery store Winco. But I have used the Softasilk brand from Walmart and had liked it also.

    For letter cake, yes because it doesn't have the whipped cream to lock in the moisture.

    Yes you can. Refrigerate or maybe even freeze a little so that its easier to cut for number cake. That would be one of the struggles with using the sponge cake for number cake

    I tried this recipe and the cake came out kinda tough. It’s not too tough but not moist either. Tell me if I did something wrong please. Yes, my eggs are at room temperature and I don’t think I over mixed the batter.

    I have gotten a tough texture when I added too much flour. Did you add 2 cups? I don't pat down my measuring cup when I scoop the flour.

    When I made this cake the bottom of the cake was inverted in like instead of the top of the cake being sunken the bottom was how can I fix this?

    It may be your Oven's baking temperature. Cook the cake a little longer.

    Yes you can. It would yield a cake as soft but it will work. You can get it from Walmart. It comes in a box instead of a bag

    My cake deflated when I made the other recipe. :( Could be that my eggs are smaller. What grams are your eggs? I know mines are large but when compare to other brands they are all different in size?

    Honestly, I don't weigh my eggs. I usually just buy "large eggs" at the grocery stores but have noticed that some large are smaller/bigger. Do you cool them upside down? They usually dont deflate too much for me when I do that.

    Yes, I have done a 2 tier before. Just make sure you use dowels to help hold the top layer
