To give you an idea of what a legit Chinese eats on a regular day, let's whip up a simple Chinese dinner meal, which includes two recipes. The Sichuan Peppercorn Chicken is poached to the perfect doneness and then mixed with a mouth-watering sauce. We will turn the chicken cooking broth into a steaming, hearty shanghai-style noodle soup. Both recipes are quick, easy, budget-friendly, and enough to feed a family of 3. Ingredients for the Sichuan Peppercorn Chicken
To poach the chicken
2 lb / 907g of chicken
1200ml / 5 cups of water
1.5 inches of ginger, sliced thinly
4 scallions
To Season the Chicken
1 Tbsp of oil
8 dried red chilies (Amazon Link - geni.us/red-dried-chilies)
1 tbsp of Sichuan peppercorns (Amazon Link - geni.us/sichuan-peppercorns)
1 tbsp chili powder (Amazon Link - geni.us/mild-chili-powder)
3 Thai bird eye chilies, diced
3 Tbsp of soy sauce (Amazon Link - geni.us/light-soy-sauce)
1 Tbsp of oyster sauce (Amazon Link - geni.us/premium-oyster-sauce)
2 tsp of brown sugar
1 scallion, diced
3 tbsp of diced cilantro
1 tbsp of roasted sesame seeds (Amazon Link - geni.us/white-sesame-seeds-w)
3 cloves of garlic, diced
3 Tbsps of oil
To Make the Shanghai Noodle Soup
5 cups of chicken broth
1 tsp of salt
3 Tbsps of soy sauce (Amazon Link - geni.us/light-soy-sauce)
3 scallions, diced
2 Tbsps of pork lard
1/2 tsp of ground white pepper
3 servings of noodles
3 oz of green leafy vegetables

    Please do make full meals. I’ve been following you so long. I am hoping someday you write a cookbook. Being non Asian I really appreciate when the cooks tell you what type of dishes go together. Hot Thai kitchen went to a restaurant and presented how Thai people combine their dishes. Very interesting. 😊

    LOVE how you wove in the summer goods: cold meat to keep, noodles made by the hot broth (gotta cook anyhow...). On a hot summer night outside, I would surely make this. Your lard appears to be natural lard. I can only imagine what underpinnings of delicious pork belly come through. I cook also with lard. I swear the unhealthy rumor is nothing more than how the word sounds. In the local Safeway, I discovered it pays to ask for good produce. They now stock flowering mini choy sum (buds unopened) and what I believe might actually be real Chinese Okra. Arlington Safeway blows my mind lately. I should ask for pork belly and camp at my mom's this summer. Living in an apartment, there is no way to make good lard and enjoy what we call 'chitlins': the twisted, perfectly rendered crisps of pigbelly perfection.

    Congrats on your channel's performance, Mandy. One food category I'd like to see you prepare are STOCKS and BROTHS. Really, when i make your dishes with homemade stock, they come out top tier... You are only as good as the ingredients you use, my chef always taught me.

    This looks so tasty! I have a question, though. Could the noodles be boiled directly in the broth, or is there a reason you cooked them separately? When I cook, I try to minimize the number of dishes I have to clean.

    This is lovely, and the first time I've succeeded (though I have often tried) in achieving the promised fireworks of that marriage of Sichuan pepper and chili. It all worked spectacularly. BTW, I cooked the noodles in the seasoned soup. Is there a reason why you don't? Too much starch perhaps?

    It is a type of mild chili in China, called Tianyingjiao (天鹰椒). it has a bright red color, which makes the dish pretty in presentation. after toasted, it also developes a smoky and complex fragrance. You can use mild dried chili that you can find in your local Asian market.

    Your recipes always look amazing but I have to mangle most of them because I can't eat spicy food due to IBS. If possible I make two versions of a dish: a very mild one with meat for me and a spicy vegetarian one for my BF. I'll probably try to make the chicken dish with eggplant instead of meat for my bf and add some shredded chicken to the soup for myself.
