+Ani Varoni Any word which seems to come into fashion out of nowhere, gets used by every "foodie" in the world (often multiple tiems a video) and then for some reason disappears of the face of the planet. The word decadent is a great example of this.

If you spin the blade, you develop warm spots in the ice that is directly touching the cylinder. Spinning the cylinder, I think, allows for more interaction with the coldest ice in the bucket. Just my thought.

The problem with Europe (UK included) and food is that out there, people are just closed minded. In every country on that side of the Atlantic, whenever something new comes out, there's always bitching about how "that's not the way it's done". It's like, if you don't make a dish exactly how they did 300 years ago, then it's clearly garbage. There is plenty to criticize about America, but one thing it's very good at is being open to other cultures and being willing to try new things.

+Michael Have you ever been to any slightly larger city in Europe? I'm assuming not because if you had, you'd have to know that what you are saying is just bs. I have an icecream place close by that serves everything from Pancakes with Applesauce ice cream over Ferrero Rocher ice cream to Weißwurst ice cream. Not exactly traditional...

I think I would keep the caramel but leave out the nuts (obviously keeping the peanut butter in the ice cream!) - whole nuts just aren't my cuppa tea. The rest looks yumms though :)

Is there a reason for scalding the cream? I mean milk proteins gets destroyed and broken when mixed with boiling liquid.
He then eats it with a spoon xD
liquid nitrogen freezes the fastest for the smoothest texture, but no one has that at home.

I just tried this recipe, and it basically yielded butter. I use dry ice and a stand mixer on stir. Anyone else have an issue, spinning this base? I feel like the fat content is too high.

Ryan Fitzgerald You have to make sure that it is cooked long enough at the proper temp, and do _not_ over mix, mix in the icecream maker untill "soupy" and chilled and then freeze, over mixing is the biggest problem with hand made icecream

If you got stage 1 of butter making it means you churned or mixed it too long
As long as the salt doesn't get into the food itself it can by just any type of salt, even that one used to defrost the pavement in the winter. So why kosher? Reminds me of mosquito yeast trap hoax which encouraged people to use brown sugar to start up the yeast activity. I'm sure 90 % users would go out and fetch some brown sugar to create mosquito trap. As well as those who try to cool down the ice cream mixture and go to the organic store to fetch some kosher salt. Anyway, love the ice cream result *heavy breathing*. My dream job.

Profesor Qwertius The larger “grains” prevent the salt from dissolving too quickly and pooling at the bottom. These machine were original designed to use rock salt which is much larger but sometimes difficult to find unless you use the CaCl “snow salt” for outdoor use. Kosher is easier to find while being not too fine(aka course)

In some countries you have to... kosher salt isn't as widespread worldwide as it is in the u.s.

Salt is pretty much always kosher in the religious sense, but people usually use rock salt in ice cream freezers because it doesn't dissolve as quickly and is much cheaper bought in bulk than table salt is.
*sigh* When you're dangerously allergic to peanuts.... :'(

sea salt would be the best .. but kosher is cheaper . also in my opinion honestly you dont even need all that just get a strong zip lock bag .. get an even bigger bag fill that with ice and the salt ... put that in a ball contraption and ride your bike around with that on the back ( burn calories before you enjoy )

nickelgrandma Rock salt is cheaper and is sold in bulk. It actually takes quite a bit of salt to make ice cream in these old fashioned makers.
