Let's Make - Peanut Butter Gelato

Ingredients:
300ml Whole Milk
150ml Cream
2 Egg Yolks (No eggs? Increase the amount of cream with 20-30ml)
120g Sugar
135g Peanut Butter
The Machine we are using to churn the Gelato/ Ice Cream is a Musso 4080. It rotates with 80 rotations per minute whipping a lot of air into the Cream which gives it a very smooth and nice texture. Truth be told, we havent seen any IceCream storebought this good.. It is really amazing.

    When I make this (following your recipe), my Lello Musso 4080 (purchased just 2 weeks ago) only requires like 16 minutes. If I go more, the layer that forms on the bottom of the bowl becomes very icy and thick. I thought you also had this machine? How can it be so different? Is my machine a newer version? Or is it the ingredients that might differ? I live in Sweden btw so ingredients should be similar.. though I don't know what you mean with "whole milk", I use Arla Standard milk (3%).

    I can’t wait for my 4080 to be delivered in a couple weeks. Glad your recipe clarified “peanut butter” since the video says “peanut butter paste”. I didn’t even know there actually is a peanut butter paste! 😂👌🏼

    Hah, true that.. Also great for people who is not fond of it.. I myself is no fan of peanut butter.. But I totally dig the Peanut Butter Ice Cream :)

    Just got one of these 4080 ice cream machines. Can’t wait to try it out. Before you put the mix in the machine should you strain it with a sieve to get any bits out ?

    Is peanut butter paste any different than smooth peanut butter? I prefer to make things myself when possible. I usually make my own PB, will that work with this recipe?

    I don't think so. I think they just wrote that to emphasize that they meant paste as in smooth, and not the chunky peanut butter. The recipe in the description only says peanut butter. Keep in mind that OP is from the Nordics and peanut butter here doesn't have a religious status as in the US :P So wordings used might be different :)

    Would this ice cream still work with half the peanut butter? I ask because I'd like a bit more subtle flavor for the ice cream and to add in peanut butter cups.

    Is there a reason to why you don’t use cremodan in this recipe? Wouldn’t it be even smoother?

    The short answer is no, the recipe that inspired us did'nt call for it at that time. And yes, it would most likely improve the result👍🙂

    The 4080 model with Amazon was discontinued and they didn't know when it would be back. So I really splurged and went with the Lello Musso Pola 5030 Dessert Maker! Are you familiar with that model? I'm assuming the settings would be the same? Thanks so much for the recipe...it'll be made soon here! :)

Thank you for watching :) Did'nt know the 4080 was discontinued :( It looks like there are still a few to get here in Denmark :) Congrats on your purchase, I'm not familiar with that model but I assume its just like the 4080 just bigger bowl and sligthly lower rpm 76 vs 80 on the 4080 :)

    @@metteandjesper HI thanks for the response! My Lello arrives today so I'm all excited! I don't know if the 4080 is discontinued in the US. But Amazon said it was currently unavailable and didn't know when it would be available. I'm new to making premium ice cream so I've been trying to learn what separates the various qualities of ice cream. I know the goal is for small ice cream and less air and am learning the techniques to achieve these goals. From what I've learned two of the most important things are how cold you can get the bowls and the rpm's of the blades. I hadn't realized the 5030 had a slightly less rpm. Hoping the difference is negligible. But I'm hoping with a slightly more powerful 250W motor helps. One quick question. I've seen where people use a thermal gun to measure when the optimum time to take the ice cream out. Do you use a thermal gun? And if so, what temps do you shoot for with the ice cream? Thanks for the info! :)

    Why do you need to heat the mix before putting it into the machine? Can't I just put the raw ingredients straight into the machine? I have watched many videos but nobody explains it.. Thanks

    When heated, egg proteins coagulate into a thick gel in which water gets trapped. When it's trapped and surrounded by protein, it can't form chunky ice crystals. No chunky ice crystals = smooth, creamy ice cream.

    600 for a machine that you still have to freeze again save yourself 540 bucks and just get a regular compressor ice cream maker 😂 . Seriously though that’s a lot for a machine that doesn’t literally do everything. What’s the difference in that and just making it without a machine and freezing it?
