How to knead bread dough

Here’s what you knead to know: Manipulating your yeast dough just takes practice. Watch our tip video to see the correct form for kneading dough. Follow along and see how the finished result should look, then practice on your own.

Instructions: Turn your dough out onto a lightly floured surface. Using the tips of your fingers, fold the dough back onto itself. Using the center of your hand, push the dough away from you. Turn the dough 90° and repeat, flouring the board as necessary, until the dough is smooth.
As you get used to the motion, you can speed up; but remember that good form is more important than speed!

    Hi there! The basic explanation of the technique is in the video description. As to why one kneads, this is to help strands of gluten form in your bread in a way that is not so harsh that it then breaks these strands unnecessarily. Rotating the dough with each kneading motion ensures that these strands form in all directions. Hope that helps! -👩‍🍳Kat

    I know bread is considered an easier thing but it’s difficult for me when I’m just starting out, all the recipes are “no kneed” and it’s confusing to me like what’s different about it that doesn’t require kneeding😭 and what recipe do I use if I wanna kneed cuz I feel like that would be calming to me

    The no knead recipes rely on autolyse, or a resting period, to allow the gluten strands to develop. So kneading is much quicker but autolyse is perhaps easier. It’s up to you though I know most professionals knead 😉

    Hi there! It will depend on the texture of the desired result for the dough mentioned in your recipe. After mixing by hand to combine ingredients it can take anywhere from 5-10+ minutes to develop structure in your dough, based on how quickly the flour is hydrating/hydrated and how rigorously you are mixing. -🍮Nicole

    I knead similar to this (maybe a little rougher) and I never seem to get the desired result, even with double the recommended time; the windowpane test feels like squaring a circle. I tried experimenting with more or less hydration, yeast, etc but no dice. The bread is ok but I know I'm missing out on something better- any ideas?

    How long or how many times do you knead the dough? I'm making a crust for a (Chamorro) empanada and the recipe says to knead the dough until it is pliable. The main ingredients are masa harina and corn starch. Thank you! 🙂

    Hi there! You'll want to knead the dough until you're seeing well incorporated ingredients and the dough becomes flexible without crumbling.     Hi, Angel! Having a small cup or bowl of water to dip your fingers in while needing dough can be very helpful. It makes dough easier to manipulate, where adding additional flour may throw off the hydration level in the dough. For the length of kneading, it will depend on the recipe. Some recipes detail kneading until ingredients are just combined, while others will have you knead for 5 or more minutes to develop your gluten structure for strength. We hope this helps 🧡! -🍮Nicole

    That's a very complicated question, because the answer is: until it's done. As an example, my spouse has a much heavier hand kneading technique than I do, so if we were both to knead the same dough, mine would take nearly twice as long as his. Additionally, it will vary depending on the recipe itself! Some doughs take lots of heavy kneading, others take very little (and can easily be over-kneaded), and recipes call only for some gentle stretching and folding of the dough while it rests, and no kneading at all. A good recipe will tell you what the dough should look or feel like when it is fully kneaded, but in general, you want it to look smooth and hold together in a ball. I know this isn't as simple an answer as you were hoping for (I know I was very frustrated by this question when I was new to bread baking!) but it's the best one I have to offer. 💛 -👩‍🍳Kat

    That depends on the type of bread you're making! But for a standard white bread like this, it will start to feel like a proper ball, rather than a sticky pile. Unfortunately, it really is one of those things that can only *really* be learned through practice. But on the positive side, all that practicing gets you plenty of tasty bread! 😁 -👩‍🍳Kat

    If you're kneading by hand, it's virtually impossible to overwork your dough, never fear! It's only when you're using a machine that this is liable to become an issue. -👩‍🍳Kat

    Mine is super sticky. After trying to knead for hours it gets to ALMOST the consistency that you BEGAN with. I have no idea what I am doing wrong. Others say flour the board / surface, others say corn starch. I use a Small Bench Scrapper to try to gather things together to knead and fold the Dough but still nothing. I'd like information. Please.

    It sounds like you may have a bit too much flour in your dough, which is causing it to be dryer than it should be. It also may be that you're using too much bench flour (flour on your table or countertop used to prevent dough from sticking). Sometimes that results in flour coating the outside of the dough, which means the dough won't stick to itself as you knead it, resulting in a fissure that won't close up. When you measure out your flour, are you doing it by volume (cups) or weight? -👩‍🍳Kat

    No bread recipe I’ve ever tried (yes, I’m still too much of a newb to do it without a recipe) has produced dough that doesn’t quickly turn my fingers into a huge sticky mess. Doesn’t matter what the weather is, or whether I added ingredients by weight or volume, or anything: If I flop some dough onto a board, you can be sure that in about 15 seconds, I’ll have hands that are completely covered with gunk. I watch a video like this and think, “Pffft, that’s not real dough. It never acts like that.” What am I missing?

    It sounds like the dough may be out of balance with hydration or may need to be worked more. A lot of dough starts off sticky or what is referred to as "shaggy" and then becomes more of a smooth ball when it is kneaded and the gluten develops, giving the dough it's strength.     I read to use oil on the surface and your hands to cut down on this. Started doing it a few weeks ago and it works for me

    Im a useless cook , trying to be healthier. Making bread is outrageously difficult. I can't even mix 500g bread flour, water, oil and salt properly

    Hi Ashley! If you have a sticky dough, lightly flouring your hands or using wet hands to handle the dough will help prevent it from sticking to you too much. Hope this can help! -👩‍🍳Morgan

    this is a bit counter intuitive, especially when you read on kneading. Adding flour to your work space to prevent the dough from sticking means you're gradually adding more flour than the recipe calls for. All other instruction videos/articles say you should prevent just doing that. Dough will eventually smooth out itself and gradually becomes less sticky.
