We just started a Bathroom Remodel and this is documenting something I just discovered. Aqua Locks! These are the best and quickest way to cap your copper lines so you can demo the space.
I am an enthusiast of many things. I will try to bring you my understanding of them as a normal user. Maybe together we can become power users. I will focus on the things I like specifically Tesla, Gaming, DIY Projects, and Outdoor Activities.
I bought these at Menards and are called Aqua Locks. My plumber referred to them as SharkBites.

I prefer these over shark bites my menards have the aqua locks
I have a corner tub and previous owners put in a wall hand held shower unit, I am renovating and do not want to have this on the wall. can I cap the pipes as above, and then close up wall. Or do I have to remove everything in wall?

These are really good to temporary work. If you are looking to keep that change permanent then you either want to cap and solder or remove completely. I wouldn’t feel comfortable leaving these in the wall.
Will this work on pvc pipes

No, this is specifically designed for copper pipes. You will want to use a hack saw or other saws
