Hello everyone and welcome to my KZread channel where I'm going to teach you how to make delicious homemade bao buns stuffed with savory char siu pork.
To start, we're going to make the dough for the bao buns. In a large mixing bowl, combine 500 grams of all-purpose flour, 3 tablespoons of caster sugar, 1 teaspoon of salt, and 10 grams of instant yeast. Mix these ingredients together until well combined. Then add in 250 milliliters of water and 1 tablespoon of olive oil. Mix all the ingredients together until a soft and smooth dough forms.
Next, we're going to knead the dough using a dough mixer on low speed for 10 minutes. After the 10 minutes, take the dough out and knead it by hand on a floured surface until it forms a round shape. Place the dough ball back into the mixing bowl and cover it with cling wrap to let it rise for 2 hours.
While the dough is rising, we can start preparing the char siu pork filling. We'll need 0.5-1 kilogram of pork chops, diced onion, salt, pepper, sugar, soy sauce, dark soy sauce, hoisin sauce, and char siu sauce. Start by placing the pork chops into an air fryer for 20 minutes. Once cooked, take out the pork and cut it into small cubes.
In a pan, add some oil and start cooking the diced onion until it's soft and translucent. Add in the cubed pork and all the spices and sauces. Mix everything together and taste to adjust the seasoning according to your preference. Let the char siu cool in the fridge before using it as a filling for the bao buns.
Now that both the dough and the char siu filling are ready, we can start making the bao buns. Take the risen dough out of the mixing bowl and knead it on a floured surface again. Divide the dough into equal size pieces and cover them with a towel to prevent them from drying out.
Take one dough piece and roll it into a round ball. Then, use a rolling pin to flatten the ball into a circle shape. Place a few teaspoons of char siu filling onto the flattened dough and fold the wrapper into the traditional dim sum bao shape.
Wet your fingers and place a sheet of square paper on the bottom of each bao bun. We used an A4 paper and cut it into small square shapes. Place each finished bao bun aside and cover them with a towel to let them rise for 15 minutes before steaming.
Heat up your steamer and steam the bao buns for 15-20 minutes depending on the size. Once they're cooked, switch off the steamer and let it sit for 5 minutes before taking out the bao buns to let them cool.
There you have it, delicious homemade bao buns stuffed with savory char siu pork. These bao buns are perfect for a snack or even a meal. They're so soft and fluffy, and the filling is just bursting with flavor. I noticed you stopped adding baking powder and milk powder and added more sugar compared to previous videos. Is the texture of the dough better? Are you using all-purpose flour or bread flour? What is the protein content of your flour?

You make cha siu bao so many times. How about making pork vegetable bao (choi yuk bao) or big bao (dai bao) with pork/chicken, vegetable, mushroom and egg?
