I save articles on all sorts of subjects, but I was unable to find it that way either. All I have is a memory, at the moment. having made cheese by hand in the 70's here in nz, i can attest to the physicality of the process. we had three 1000 gallon baths which produced 3000lb of cheese. 80% of people who started working with us quit within a week, as it was to much for them. but hand made cheese is so much better than factory cheese as each step only progresses when its ready rather than not letting it hold up the assembly line.
