How should a fine dining restaurant operate during a crisis? Simon Kim, owner of Cote Korean Steakhouse in New York City, decided to keep the restaurant running so his staff of 105 will have something to come back to.
Cote, which earned its first Michelen star within its first four months, is known for high-end cocktails and dry aged beef, but has pivoted to delivery and making meals for essential workers. With some inventive ideas and a lot of dedication, the people of Cote have rallied around making the best of a difficult situation.

wimmisky how is he forcing them? They all look happy to be there. If they didn’t want to be there they wouldn’t be in this video. Keep in mind New York is the land of high taxes and cost of living so if anything the profits are going towards making sure they don’t close down and the ones working are still able to get paid.

@@TheWutangclan1995 I work for Simon at Cote Miami and I can assure you we all absolutely love working for him and at Cote we are literally a family it’s unlike any other restaurant I’ve worked in before
Quick suggestion 💡: For the sommelier, you can record a video. The upload it as a hidden video to KZread and include a QR code that opens the video in the 'to go' package.

“We had almost about 100 employees, now I think there’s about 15 of us that’s working but it’s sad. We’re doing this so that we can cook going so that by the time we’re ready to open after all this pandemic is over then we can have the whole team back.” (This line got me teary eyed)
Simon is an example how owner walk extra miles to maintain his team healthy. Preparing vitamins with his own hands is next level compassion. I wish Cote the best and keep surviving in this uncertain times.

The stress of being a restaurant owner around the world right now must be incredibly depressing! Thank you everyone that is helping where they can to donate or even order food to keep these families fed!
Nice of them to keep their staff employed while donating their food, I hope they set an example for many others to follow

Dude they went from over 100 people to 15 :/ I used to work at a place like this, and they fired me as soon as they started to see some revenue losses in March. Even if my place stayed open like this one, they probably would have only kept the highest level people. Notice how managers are doing things prep cooks would normally do in this video.

I'm sure most places would love to keep their staff employed but it just isn't feasible right now. Nothing to do with setting examples for others to follow when most places just down right can't do that.

Matthew I also worked at a place like this and it’s not the highest level people they keep. It’s the best. Everyone working with me are my best, most reliable coworkers. So if you’re not working atm in a place that’s running limited staff, that says something about your work ethic.

Amber Read my owner has done the same for us! It’s pretty awesome considering these are pretty expensive and hard to come by these days.
That cocktail delivery service will propably be at demand after the pandemic aswell! :D

Before the shutdown cocktail delivery was not legal. This is just supposed to be a temporary relaxation of the liquor laws.

@@darlgearhart988 I mean, it turns out, when you have a bunch of people who are stressed out due to circumstances they can't control, and they are also not allowed to relieve that stress the usual ways they would by relying on friends and family they can't see... They will turn to other methods.

@@cristianmunoz2480 When cars were a new invention, Michelin made the guide as a way to get people to get interested in restaurants all over and use their cars. Obviously the more people use cars the quicker the tires wear out, so it's a kinda roundabout way for Michelin to get more people buying tires and them making more cash.

@@QuarterFlip1 Yes! That's why the star ratings translate to whether it is worth the drive! Like 3 star is "worth a detour," etc. Keep in mind that it was initially only France, so it was listing a lot of rural and small town restaurants all over the country.

very inspiring, instead of going to news outlets and crying about the situation - they are surviving and giving a smile to others.

I can see why they are a Michelin Star Restaurant. From food to service, the pride and love they show for their work is plain to see. They go above and beyond. I don't know about others but I will be making a at Cote as soon as possible to be a patron to this inspirational establishment. Appreciation and respect to Cote from California.

Came from that Eater video about this restaurant and fell in love with how Simon and the 2 master chefs operated the restaurant. Now I'm here and hope their business keeps on thriving. The States is not in my go-to vacation list, but if by chance I come to NY, I'll absolutely go to their place.

Michelin restaurants in Argentina vacuum seal each component of the dish so you just heat them up at home and plate them at home, it’s great

This is great. Proving that we don't all have to drown in a bowl of water when working in Gastronomy. I was working at a restaurant in Austria and I lost my job after the lockdown because my boss didn't have the mind to come across these brilliant ideas...also instead of being given an immunity boost package I was coughed at. I needed to see this workforce, thank you. And to all my hotel/gastronomy/tourism workers, stay strong!
I wish the restaurant I'm at had the ability to do take it, but we are too small to make it work without hemorrhaging more money than we do being closed

I wish the Michelin star restaurant I worked at didn’t fire me as soon as this shit popped off. I would have gladly helped come up with a sustainable delivery menu, or even deliver the food. It sucks when people who work at White Castle and Popeyes have more job security than actual cooks. The only people they worried about are their higher ups. Even in this video they said they went from over 100 employees to 15. I wonder how many prep cooks, garmo and line cooks were let go. All these munchies episodes only get the perspective of the owners and the staff that the owners chose to keep, which is fine, but I wanna see one about the cooks that were doing all the grunt work day in and day out, only to be let go as soon as the owners salary comes into question. And now these higher ups act all high and mighty doing what we used to do (prep and butcher etc) saying “it takes a village” after they fired us. Fuck that
