Hot Cross Buns

These Hot Cross Buns are well flavored with spices, raisins and mixed peel. They are irresistible and delicious!

Ingredients:
1 cup of full cream milk
½ cup granulated sugar
3 tsp instant yeast
2 large eggs, whisked with ½ tsp lime juice
½ cup unsalted butter, melted
½ tsp nutmeg
1/2 tsp cinnamon
1/8 tsp saffron, just a pinch
1 tsp vanilla extract, optional
4 cups all-purpose flour
¾ tsp salt
½ cup raisins
3 tbsp mixed peel
Glaze / Simple Syrup
½ cup granulated
3 tbsp water
½ tsp vanilla extract
Icing for the cross:
1 cup icing sugar
2-3 tbsp milk or water
*Bake in a preheated oven at 375 ° for 20 minutes until golden.
*You can replace the eggs with heavy whipping cream for an eggless option

I used this recipe, the hot cross buns are soft, fluffy and lovely. ❤❤ I glazed the surface of the buns with milk before baking, it had a lovely golden brown coating when finished.

My hot cross bun came out great!! I had to make a second batch the next morning because they couldn't get enough. The second time around my mixture came out a bit stickier but instead of just adding more flour I used about 1 tbsp of oil to keep it from sticking to my hand while maintaining the consistency. I love this recipe it was very simple and straightforward.

Great idea adding oil instead of extra flour. The extra flour makes it heavy. Great job 😊

Im trying this recipe today but converted it to grams and my dough ended up too wet. I just added more flour to match the consistency in your video and praying everything works out 😳

Ingredients: 1 cup of full cream milk, warm temperate ½ cup granulated sugar 3 tsp instant veast 2 large eggs, whisked with ½ tsp lime juice ½ cup unsalted butter, melted ½ tsp nutmeg 1/2 tsp cinnamon 1/8 tsp saffron, just a pinch 1 tsp vanilla extract, optional 4 cups all-purpose flour ¾ tsp salt ½ cup raisins 3 tbsp mixed peel Glaze / Simple Syrup ½ cup granulated sugar 3 tbsp water ½ tsp vanilla extract Icing for the cross: 1 cup icing sugar 2-3 tbsp milk or water *Bake in a preheated oven at 350° for 17-20 minutes until golden. OR in a preheated oven at 375 degrees for 17 minutes for a darker brown top. *For an eggless option, you can replace the eggs with 1/2 cup heavy whipping cream, and brush the tops with melted butter before baking.

Hi, I’m not sure what might have happened. Did you add a lot of extra flour?
Can i use orange peel or juice instead of the lime juice and can i add a tbsp of powder milk?

Hi, yes to both questions. The lime juice is to take away the freshness of the eggs, so orange peel will work great and add flavor. Enjoy! 🙏🏼

Hi, the proofing doesn’t have to look the same as mine, but if the yeast doesn’t activate at all then it may be dead and the dough wouldn’t rise properly.

Look to the end
1. You do not egg wash buns - ever. It is an enriched dough and when made correctly it will brown in the oven. Egg wash will make a hard crust on what should be a soft item. 2. Hot Cross Buns are baked with a cross on them & not an icing cross after baking
The traditional cross on hot cross buns is not icing! It just a flour and water paste.
I made this today n followed it to the T It came out horrible. Did everything right. Didn’t cook well. Don’t know what I did wrong. Was soggy inside It rose well. The balls came out great Ugh.

Hey, sorry to hear that. I think it probably needed a few more minutes baking. Did you bake at 350 or 375?
