    What about the removable compartments above the evaporater coils? Rea world issues.. also, gotta check the condensor coil/fan.

    Sorry for the delay. It depends on the size of the ice machine, so for a KM-320M up to KM901M we recommend 16.0 fl oz of cleaner mixed with 3 gallons of water for cleaning. For sanitizing, use non-scented chlorine bleach (5.25% sodium hypochlorite) at 1.6 fl oz mixed with 3 gallons of water.     Yeah right in the field ice machines get so nasty cleaning like this is a joke, mold and black slime on everything in all tubes

    as a technician I would never leave a place by cleaning it like that. that doesn't clean the machine one bit

A maintenance schedule from a good technician will keep your HOSHIZAKI trouble free for decades! We used a machine in our lobby for the video - so it is NOT a 1-to-1 example as what you would see in the field!

    @@HoshizakiAmericaInc estou com problemas em uma máquina modelo KM-901MAH ela trabalha 7 minutos e depois inicia o procedimento de liberação do gelo e assim sucessivamente! Como faço para resolver esse problema e reprogramar o tempo de formação do gelo? Desde já agradeço.

    This is just the basic cleaning step, sanitizing is essentially the same steps but with chlorine bleach instead of ScaleAway. Yes, you should always sanitize - see the advanced cleaning & sanitizing instructions here: kzread.info/dash/bejne/nYRrk7CCkc6Tcto.html. Have your ice machine professionally cleaned by a service tech at least once a year for the best results.

    For a cuber machine (like the one in this video) once a year, for cubelet/nugget/flaked icemakers you should clean it twice a year. If you have bad water conditions, use flour or bake near the icemaker - then more frequent cleanings will be required.     The cleaner is Hoshizaki Scale Away. The video indicates to refer to the instruction manual for the proper ratio of water to cleaner at the 1:20 mark. The manual also identifies the proper cleaner for that machine. You can lookup your model's manual here: www.hoshizakiamerica.com/manuals

    @@Astrojamus Any Non-Nickel Safe Cleaner or Lime Away. Hoshizaki ice makers have stainless steel evaporator plates, the competitors have nickel plated evaporators.     You can use any Commercial Ice machine cleaner as long as it stays between 28~30% phosphoric acid content no more then 30%. Sanitizer is 5.25% sodium hypochlorite (bleach).

    Once a year preventative maintenance cleaning (what is shown in this video) is the recommended schedule outlined in the manuals for these models. But more frequent and through cleanings maybe required depending on your incoming water conditions (hard water), environment where icemaker is located (dust or flour in air), other equipment it is located next too (please do not place icemaker next to hot equipment), etc. Tip: You could go longer between cleanings if it is performed by a factory trained service tech. They know all the nooks and crannies and should do a through job.

    OMG, how many hours have I wasted pulling all of the water side apart and cleaning it by hand with a good cleaner and brushes. Removing the top and scrubbing the evaps with cleaners and brushes. inspecting the check valve for wear. I cleaned everything by hand, THEN used the Hoshi acid cleaner, then the sanitizer. Don't use Hoshi cleaner on different brand machines unless you enjoy replacing the evaporator. Maybe not so bad if the owners used good quality water, the appropriate filters and did this weekly. LOL nahhhh. Hoshi is my favorite ice machine for ice and to work on. I like the spiral bound service books too. If I remember correctly color coded by refrigerant . I saw Hoshis working when they shouldn't have but they were cranking out ice.

    What about scrubbing the grid and all the components...wtf...I do 10000% better than the Factory...wow
