    About to do an ice machine cleaning for about 15 machines, I’m just now starting to do it. I’m a helper and the gentleman I’m working with has done many in his day so this video helped me get a better idea before we head out to do them! Thanks!

    Good Stuff Dave . Over the years I’ve found out that Hoshizaki ice machines are the hardest to clean when neglected by customers. And you won’t be able to clean it 100 on the first visit .

    Had a similar issue with a customer with a unit on top of a fountain. There was no fresh air flow around the unit. It was up close to the Tbar grid ceiling, enough where I literally had to remove the tile to get the top cover of the unit off. I did a similar deal but I cut the grid tile in the rear corner behind the unit and used a piece of stainless sheet metal riveted to the unit to direct the exhaust air up into the ceiling and also had 1 down the side that was screwed into the side panel effectively boxing in the side. The exhaust had no where to go but up above the ceiling. it did its job and made a reluctant customer happy and impressed. Only draw back was having to remove the 3 screws to access the filter screen for cleaning.

    Very good video. These machines are so different than manitowoc and Scotsman. The tip of the day made me laugh, I can definitely see someone pour 3-5 oz of sanitizer, and freaking out on the job.

    cool video- can't take no short cuts on that one LMFAO-looks like an all day job to me - thats what it takes me to do these manitowoc's were i work to get everything nice and pure. Maybe when it time for a new one they should consider a water cooled cuber. nice job bro

    Nice job. The ice cube guide looks like it's missing some pieces. I had a similar machine that the guide kept moving out of position causing the ice to drop into the reservoir. There was a small crack on the outer edge of the cube guide. I also believe the white plastic had dissolved because of the chemicals that are added to the municipal water. I replaced the guide and the bin filled with ice. I have pulled the plug on three of these machines so I don't have to manually remove the ice from the freestyle machine under it. The machine are annually pm.ed. They are about 5yrs old but look brand new. The manufacturer says to use bleach to sanitize and clean. I use what you used. The side panel comes off easily and gives you access to the front of condenser. Because I clean and sanitize the ice hopper in the freestyle I use a garden hose and nozzle to knock the crud out of the ice machine. It gives me a chance to blow the slime out of the drain lines too. I use a.c. condenser cleaner in a spray bottle to clean that greasy dust off the insulation and panels. When I'm done the machine looks and runs like new. I do use nickel safe and let it pump around while I do other necessary tasks. With the garden hose you can really deep clean , especially the reservoir and condenser. Some dirty water may get to the floor but it is worth it. I can do the pm when nobody is around which you know is a wonderful thing. I have a couple of brushes I use and can be had at Grainger or Johnstone. You can check there online catalog for something that looks like it would work for you. I use a piece of that brown 3m pad ,we use to shine copper prior to solder or braze , to clean those tough spots. Enough,I ramble.

    Hoshizaki says not to use 'nickel safe' cleaners on their machines. Something about the nickel safe cleaners contain citric acid which attacks Tin. Just use the regular diluted Phosphoric Acid cleaner on them.

    probably health or fire inspector made them remove the cardboard from on top, plexiglass or frp shouldn't set off any alarms or stainless of course. (firberglass reinforced panel)same paneling often used for kitchen and restroom walls, which you probably already knew. clearly added this for others :)

    when i clean any ice machines i was told to use the power washer. and a long scrub brush. almost like new when im done. i know this is a bit bad for the business but we put in one of those uv light filter in one of the machines and its almost like new after 6 months or so. we still clean them but the cleaning isnt that intense~! good video

    Thanks for the video i just bought this exact model used. Seems to be working fine but do you happen to have a video or a link to showing steps how to take this apart. My machine will be used for ice for the boat/fishing not consumption but I would like to fully take apart and clean so I know exactly what's been done if I ever have issues with it in the future.

    Usually we melt it, and wash the dispenser out as well. Communication with end user is critical

    did you take the float switch out and clean it out ? even tho the KML series float just sits in the water with no rubber boot on it...it still has to be cleaned cuz the float could get stuck on the scale or be weighed down with scale all over it.

    Hey I was under the impression that nickel safe was not to be used on hoshizaki. Not being a jerk just mentioning it. I use nickel safe for a Scotsman in Manitowoc but I had to change for Hoshi. I do love the brush I'm going to get me one of those

    Because, of Hoshizaki's unique stainless steel evaporator any commercial ice machine cleaner can be used, a nickel safe type cleaner is not required. Hoshizaki recommends LIME-A-AWAY or Hoshizaki Scale Away which is available through your local distributor. You can use heavy duty or nickel safe

    I have cleaned much dirtier machines. What I really hate is when they put them in some cubby where you can't get to it. If a machine was really bad I would take it back to the shop so I could get at it from all sides. It was nice when customers would let us put them on at the very least, semi annual or even quarterly service so they didn't have a chance to get so bad. Most places don't want to spend the money till it is really nasty. I remember a bar at Panama City beach called about black specks in the ice. I took a 32 ounce glass full of black slime to the bartender. Orange and green slime too :/ . That was just the beginning.

    Those tubes are always why I preferred manitowoc machines. Back in the day when I did these, we'd have all those tubes and elbows in the van and we'd replace them on (our) first time cleanings because of the million call backs of "your tech didn't clean the machine" we lost the a dunkin donuts account because of it once.

    The newer machines have gone to a black rubber for a lot of that piping. Wish the short discharge tube from the water pump was also black, that one always turns a nasty black/purple color. And even soaking that little hose in a very concentrated solution of hot water and industrial bleach didn't do hardly anything to it.

    those plastic parts, please purchase all new those hard plastic parts and install new ones and old dirty ones should be submerged in the solution( the solution is mixtuire of water 60% and clolax( laundry bleach) 40%), for some 3weeks, those black mold will be gone. and please use those hard plastic parts for the next time cleaning. i do use lime away and a plastic brush. some local, country side, hard water damaged ice machine , this machine will take 6 to 10 hrs to be clean, for the evaporator plate, please use fine metal brush to remove water scale. please do your best, cleaning those ice machine come with lots of pain

    I cleaned a km-500something once kept outside super dirty. It threw a 1 beep aftereards and te thermistor ohmed good so i went ahead and called tech support. I shit you not he said "Man thats an 18 year old machine". Lmao still working to this day

    State food inspectors should start looking at this stuff...gross! I guess if you grease enough palms in Cali anything goes...I WOULD wear a mask to even enter that restaurant and not get black mold in my lungs...

    Not your fault Dave, but I think I'll take my drinks without ice if I ever make the mistake of stepping in there. These places want to make the money, but not pay for preventive maintenance on the equipment that makes them money.

    they're likely all that way, unless just cleaned... if you have a fridge/freezer with ice and water, get down and look up around the chute and nozzles, unless you regularly clean them, they'll be black mold coated everywhere! ;) guaranteed, every single one I've seen is that way, I repair some appliances and do other construction work, so I'm very often crawling on the floor around them working and always look up at them lol.

    Id like to hear everyones opinion on cleaning ice machines. No matter the brand I found when having to clean a neglected machine properly, as in a complete disassembly and soaking/scrubbing all the parts then sanitizing everything, it takes me about 3 hours start to finish. This includes emptying and sanitizing the bin. My old boss used to get pissed as hell at me for "taking so long" and we would frequently argue about it. When its been years since the last cleaning and the scale is preventing the machine from functioning theres no way I could get in and out of there in an hour like he claimed it should take and it never failed to piss me off. One of the old guys who trained me in showed me how you can remove even the toughest of scale if you let the parts soak in 100% cleaner for 20 minutes to a half hour, and during that time he would be cleaning the bin and cabinet. Sure, some scale is never going to come off but Ive used brass scrapers on some just to loosen it up. And I never could figure why the boss said its a waste of time to clean the bin, Ive seen plenty of mold and slime in the bins as well as the machines so to me theres no question the bin needs to be done. I know theres a trick some guys like to do where you take a garbage bag and spread it over the ice in the bin then just clean the machine, catching all the cleaner and sanitizer in the bag, but again you are skipping an area that gets dirty. Especially if its one of those bins that has the hinged door that you need to lift up to scoop the ice out, the underside of that door is always moldy from peoples fingers. After the cleaning I used to make a batch to check the function of the machine then toss the first batch of ice out. Maybe Im just a slow poke, I dunno, but Ive talked with plenty of guys who are also in that 2 to 3 hour window for a complete cleaning.

    These owners should have to eat ice out of this before you clean it if it actually makes ice, since they feed it to all their customers. After being in this trade there is less than 10% of restaurants i go to or reccomend to people. These fucking people should be closed down, sadly this is how 75% or more of how all restaurants run. Disgusting. I have to try hard to not yell at these type of customers when i inform them they are gross as fuck.
