Hong Kong Style Spam & Egg Macaroni Soup!

Crispy, salty, delicious fried spam slices, with macaroni, a delicious broth - all topped with a crispy fried egg! This incredible dish is a traditional Hong Kong breakfast, from Jeremy's second cookbook: Hong Kong Diner!
Ingredients
100g macaroni elbows
50g spam, sliced into thick slices
1 egg
deep fried onions
Chiu Chow chilli oil
2 tablespoons vegetable oil
1 spring onion to garnish
½ a gem lettuce, sliced in half lengthways
½ thumb-size piece of ginger, peeled and sliced
2 spring onions, roughly chopped
2-3 cloves of garlic, bashed, skin on
1 litre fresh chicken stock
2 tablespoons light soy sauce
1 tablespoon oyster sauce

I lived in Austin, Minnesota where Hormel is headquartered. They have a Spam museum there! I knew the Brits love spam because of the war. I was unaware it travelled to Hong Kong!
Spam was a stable food when I was younger still is now 60 years later

I was just wondering what I should do with 1/3 of a tin of Spam in my fridge (left over from some budae jjigae I made), and suddenly this plops into my KZread subs. Thank you, sir; this is clearly destiny. I think I'll check out that book of yours, too.
