I think hipsters would go for this stuff rather than a fancy restaurant to be more "unique". Same reason they frequent food trucks and fusion food.

Yeah, it's a never ending circle...If the locals get tired of too many hipsters they'll go eat somewhere else, and soon after the hipsters will follow them yet again in their desperate hunger for authenticity and originality

eggshells are high in calcium. Freeze them, grind them to a powder and consume, or put in garden or lawn. Use organic free range eggs.

Sometimes being picky with what a society eats is a good thing. At times it is not because we choose not to but rather for the sustainability and conservation of some species. If every continent was to eat indiscriminately and in the same volume and rate as Asians do when it comes to seafoods, the only left in the ocean would be the water itself.
