Mulberry Cheesecake Ice Cream (I doubled the recipe in the video):
Mulberry Compote (use any berries ;)
1/2 cup sugar
1 TBL cornstarch
1/2 cup water
1 and 1/4 cup fresh or frozen berries
1 TBL lemon juice
Graham Cracker swirl ( I substituted with Crunchy Nature Valley Bars)
2 and 1/4 Cups graham cracker crumbs
1/2 TSP ground cinnamon
1/2 cup melted butter
Ice Cream
1 and 1/2 cups sugar
1 package vanilla pudding mix or cheesecake pudding mix (i used 1 in my double recipe, it was perfect!)
1 package cream cheese ( I used one 8 oz package for double recipe)
1 quart heavy whipping cream
2 cups milk
2 tsp vanilla extract
In a small saucepan, combine sugar and cornstarch. Gradually stir in water until smooth. Stir in berries and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered for 5 minutes or until slightly thickened. Cover and refrigerate until chilled.
In a gallon freezer bag, add graham crackers and crush with a rolling pin. Add the following ingredients and shake bag. Pour into a baking dish and bake at 350 for 10 to 15 minutes. (if using Crunchy nature valley bars, like my self, skip the baking.)
Meanwhile, in a large pot add all the ice cream ingredients. Bring ice cream mixture to 175 degrees. (Before boiling point). I liked the cream cheese being clumpy. Or you could melt the cream cheese further, until smooth. Take of heat and let cool. Place pot in a ice bath.
Follow ice cream machine instructions.
Once the ice cream is formed, pour into containers. Add toppings and swirl into ice cream (not mix). Place in freezer over night.

Strawberry Chia Yogurt Popsicles:
Follow my recipe for plain yogurt in the instapot. Then add 2 cups strawberries (fresh or frozen) to small pot. Add half cup sugar, 2 TBL chia seeds, and 2 TBL water. Bring to a boil until sugar is melted. Then remove from heat and chill in fridge.
Kefir Lasse:
Add to blender 1 to 2 cups frozen or fresh fruit. ( I love strawberries or mango), about 2 cups freshly made kefir, 1/4 tsp cardamom, 1/4 cup milk. Add ice if you'd like. Mix and enjoy! So good for your gut!

So happy to have found your channel today. I'm a homeschool/homesteading Mama of 6. Loved all the dairy recipes! We're hoping to get a milk cow next year and I'm excited to have an excess of milk! We've been making vanilla ice cream lately and are planning to make a "fancier" flavor for Father's Day.

So happy you are here! Sounds like we have a lot in common. I'm actually homeschooling all my kids for the first time next year, and expecting a new one next month. We also hope to get a cow within the next couple years. But I love making homemade dairy now. I think it will make it less overwhelming when we get the cow.
Your husband is so wonderful to support you by eating ice cream with you everyday until baby is born. 🤣🤣

Homemade granola for yogurt parfait’s!
I am so making the ice cream and popsicles. I already make yogurt (which is better than any store). I had 7 children and now have 24 grandchildren. We didn’t have a farm but I made most things from scratch. I wish we had these types of videos when my children were little. I’m so happy that people like you share your experiences and even fails for others to learn from.

I love mulberries. My Grandpa would get up in the tree and the rest of us would hold a sheet under the branch. Grandpa would shake the branch and we caught the ripe berries in the sheet. How I wish I could have Grandma's Mulberry pie one more time.

Using my husband's account here. I love your mulberry tree. It makes me miss my favorite mulberry tree that had fruit punch tasting mulberries in Idaho. That ice cream looked Amazing! I have been trying to decide if I really want an ice cream maker for a couple of years now. You've convinced me. It's time to get one. ☺

Sounds like a pretty amazing tree! My husband is from Idaho. We have lots of good memories from Idah too! Yes! You should definitely try an ice cream maker this summer. They do have some pretty nice new ones these days. Or you can keep your eyes peeled for a used one.

Huh, what is tour routine with your milk? Do you have your own milking cow?

@@jenilee.thepioneerhome Yes we have our own cows We have found that each cow varys in how long the milk keeps depending on the bacteria they carry.. CMT test help to identify the source of bacteria.
Did you use store bought yogurt to culture your new batch? Can't you do that once and then save some of your own yogurt each time for the next batch?

Yes I did. And yes you can. I know that it weakens after a few uses. But you defiantly can the first few times or until you feel you need a stronger culture.
