    Hi beautiful, I recently discovered un-raffined coconut sugar and just started using some. It tastes good and is not bad for my skin but I wonder if it’s good for the gut?

    I am not sure about cornmeal as I am new to eating fermented porridge myself however I did a google search and it looks like yes, you can also ferment cornmeal. The possibilities are plenty.

    you can use filtered water but make sure the filter you use removes most of the chlorine from the water.

    Thanks for the recipes. I will not cook any though but „heat“ them to max. 40 degrees Celsius (104 degrees Fahrenheit) to keep our tiny friends alive. Poor things still have to make it through the stomach alive.

    Great video. It is so informative. If I make kefir yogurt with coconut milk can I make it with organic milk later on? Also when I make coconut kifir yogurt it seems to just go stall and still be milk and not have turned in to yogurt. I end up with stall coconut milk rather than coconut yogurt which I think would be really tasty. Do you have any suggestions?

    I have made the best yogurt ive ever tried with coconut and what i realized is that the most beneficial yogurt is made by using whole coconuts separate the water from the flesh and then blend the flesh slowly adding the water as it thickens and then add half a teaspoon of panela(natural sugar) and 1 gram of good quality probiotic powder or 1 tablet. Mix using a wooden spoon and then put a cloth over the top and leave for 24 hours and the blend again as the pieces of coconut with have grown in size and then leave it with the cloth over the top for a further 24 hours and it will create amazing yogurt that can be sweetened as you wish I used honey and mixed with goji berries.

    I am confused. If you are cooking your porridge, doesn't that kill the beneficial organisms? Like when you mentioned the miso, you knew not to boil it. So I am not sure about the first dish you made.

    It's a good question and one I had myself when I was taught how to prepare it by the elder women here in Kenya. However, this is the way that people here have been preparing this dish for many years. They mainly eat it to aid with breast milk production and for healing purposes and it really works. I have been doing some reading and it looks like not all strains of probiotics get killed. Also, when making the porridge the cooking part only lasts for about 1 -2 minutes as it thickens fairly quickly, so alot of the beneficial nutrients still stay in tact. I hope this clears things up a bit

    My mum would never heat her fermented foods above 118°. Nice and slow. And with this being a grain, think of sourdough breads. Grains are a bit different. Just keep a electric temperature thermometer while heating. I just keep my stove on low. You can start at a higher temp but you must be quick in lowering the temp. If your on a electric stove stay low. 😉 hope this helps ladies. I sure miss my mum. She was amazing in the kitchen and gardening. I never had a canned vegetable until I ate at someone else’s home. I was a bit mortified when served green beans once. Sent me into a rolling laughter with the color and the limpness. I felt so bad but I couldn’t hold it in. My friends father asked, “I’m worried for you, you have never eaten green beans?” I told him I’m sorry, but I never had a vegetable out of a can. We chatted about my uncles farm and my families ways of canning and fermentation. I said I thought all cans were Jars. Like we use at home. That summer my friends family put in their first garden. And it was canned jar green beans from then on. So. In a way. My hysterical laughter and explanation was a good thing. I was so embarrassed 😳 that I couldn’t stop laughing. I had their first green beans that next winter with pearled onions and potatoes in them. So good!

    If you leave the keffer grains in the coconut milk for longer, will the yogurt be thicker? Amazing video, really want to try a few of these :)

    HalfABurger PLEASE don't take notice of this surface knowledge fool. You have to keep changing the milk as the grains get fed and eventually there's nothing left in the same milk. Most of her methods are incorrect. Typical of information gained from other experts with limited knowledge or misunderstanding. Initially, it's best to change the milk after 24 hours

    I have done a second fermentation before. It is what gives the kombucha the fizzy texture it is known for. I couldn't really go into detail about all of the different facets of fermenting in this video cause of timing but yes, I do love doing the second fermentation process.

    Regarding fermented vegetables, do you like kimchi ( 김치 ) ? I have heard kimchi is supposed to be quite healthy ( just like other fermented foods) , as well as delicious ( I can definitely confirm the latter (: D ). Hence, no Korean meal is complete without kimchi ( : D

    When you make Kombucha tea do you have to make such large quantities of it? I am really keen to make this as I really like this tea allot.

    It helps to make large quantity cause it finishes very quickly. Mine lasts for about 1 week to 2 weeks if I have a cup a day. If you want to make less I recommend halving all ingredients like I mention in the video.

    Dont use metal lids or cutterly as the high bacteria breaks down metal, use bamboo spoons and forks ;) Also buy multi strain 30 cap probiotic supplement and add it to start the cultures :D

    No it is not intoxicating. This is a dish that Kenyan mums have been eating for centuries to improve breast milk production. It is very rich in probiotics and other nutrients.

    Why have you added the brine to the cabbage when you can extract its own juices by massaging it with salt (without adding water)? I've been making sauerkraut for a long time and every single recipe I have come accross asks to extract the juices of the cabbage just by adding salt and massaging the grated cabbage. No added water needed. Also, every single book or video I have come accross about fermented foods sais that heat kills bacteria. That's how sterilization works in industrial food production and home canning. You apply heat to kill ALL bacteria. And the whole point of fermenting foods is not to kill it. You may be right that some strains don't die at certain temperatures, but if we are making fermented foods to attain the maximum possible benefits from the bacteria, I would argue that even killing off some strains would be counter productive, don't you think?

    Yes you can, but make sure it is raw not pasteurized. Both Vitamin C and the lactobacillus probiotic bacteria found in sauerkraut responsible for helping you with your digestion - are killed during pasteurization.

    I liked the video but she does say a few things i disagree with. Cooking probiotics kills them so you want to eat/drink probiotic foods raw as much as possible or you destroy alot of the benefits, and sugar doesnt kill probiotics, many of them feed on raw sugar and you actually need sugar to make some probiotic foods like tepache. White sugar is sucrose and glucose and agave nectar/syrup is fructose and glucose, but the probiotics like yeast will consume most types of simple sugars (cabbage/sauerkraut sugar ratio is about 40% glucose, 30% fructose, and 20 sucrose for example). Pure undiluted sugar can kill most organisms but thats through osmosis, it sucks the water right out of them like salt does. You should avoid processed sugars like white sugar but not because it will kill probiotics. High sugar consumption CAN throw off the various types of bacteria (good and bad) in your GI tract however, since they normally live in certain ratios based on your diet but a ton of sugar can throw that balance off leading to too much of 1 types of bacteria at the expense of others, and thats without getting into the many reasons lots of sugar is bad for you in general. I'm definitely trying the fermented porridge recipe!
