Aligot is actually made with a french cheese called "tome fraîche", which give it a very distinctive and delicious flavor that is not easily replicated with other cheese... It also melts like crazy, you can see the difference in texture in french restaurants vids... If you come to France one day you should definitely try it :)

I am French I love this Potato’s Gruyère I add cream And yellow eggs 50/50 potato’s gruyère Heaven heaven ^^ You can add beef « mixed » or tenders chicken Maybe bacon crispy too :)
