    You actually can’t with most poultry. That’s a peking duck, which are usually pretty expensive, partially because you can separate the skin like that, it makes it really crispy.

    Je préfère le canard laqué cantonais, de Hong Kong par exemple ! Beaucoup plus savoureux et parfumé ! Sans parler de sa sauce (quand c'est pas déjà assez salé). Le pékinois, un peu de peau et de chair et après ? Cuisiner le reste (une chair qui est déjà cuite) ? Très peu pour moi !

    • For marinade: (Chinese) 5-spice powder, garlic & ginger powder, black ground pepper, (preferably light brown) sugar, (preferably sea or Kosher) salt, and Hoisin sauce. *If there’s no Hoisin sauce available, you can mix a bit of plum sauce with oyster sauce. • For glaze: rice / white vinegar (you came also add some vodka and Shaoxing wine) for the crispiest roast; (diluted Chinese) maltose (or honey), and dark soy sauce. You’re welcome!
