Homemade Pancetta - Delicious Italian air-dried ham

🍽️ Ingredients:
Meat:
1 kg pork belly (depending on how much you want to make, mine was about 360 g)
Spices for 1 kg:
29.5 g salt
2.5 Cure #1
2 g sugar mixture 50/50 alternatively brown sugar
1 g pink pepper
0.5 g black pepper
0.5 g fennel seeds
0.5 g juniper
0.25 g bayleaf
0.5 g chili (optional)

Hi! Great recipe and I like the process of initial curing being done in the vacuum bag as it cuts down on the amount of salt needed and reduces the risk of over-salting. I do my capocollo the same way. Question on one of your instructions: When you mentioned to air dry the meat until 30% weight loss, is that based on the post vacuum sealing weight, or the initial weight prior to vacuum sealing? Thx.
