ABOUT ME:
By the age of 6, there was early evidence that food would play an important role in my life. Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.
In the process, there was one more thing I learned. Despite the explosion of global cuisines in restaurants all across the U.S., you can’t fully experience the wide world of flavor all from your own backyard, Toto.
Following that thought put me and my partner, George on a plane to Alicante Spain in 2014 where we have lived ever since. Our mission is to explore the aromas, ingredients and collective imaginations that are all part of Spain’s vast culinary heritage.

This is great! How long do you think I can store the dressing in my fridge? I kind of want to make a big batch since I’m not sure I’ll use a can of anchovies for anything else so I wanna use it all up for the dressing

Hi Pooja! Thanks for the question. I wouldn’t suggest that you keep it longer than a week but funny you should mention anchovies…I happen to use a half-can last night in a quick tomato sauce for pasta…gives a great umami flavor and replaces the salt. It even is a great trick to enhance canned tomato sauce if that’s all you’ve got and makes it taste less sweet and more homemade, so take that leftover anchovy and just throw it in something else! And btw, it’s awesome when you add it to a saute of mushrooms… Cheers, Caroline
This dressing looks really yummy 😋. I’m lactose intolerant so I’ve not tried yogurt since I became aware of my intolerance. But I’m tempted to try this recipe. Also, I like your food processor. It looks fairly simple to operate and I’d like to know where you bought it if you don’t mind sharing. I’ve never seen one in the area I live (the PNW of the US). Take care, Caroline. Hi Goldy - Sorry to hear of your diet challenge of lactose intolerance. I understand since I suspect I have similar issues. As far as the mini food processor goes…I first saw one like it on another KZread channel but couldn’t get an answer as to where to find one. I spent a few hours online trying to locate something similar with no luck. Then I saw it at a local grocery store! And the price was only 19 euros so even better!! Then I saw it at a small store for 80 euros…so that made me feel really good! The best part is that it has the power (900 watts) to handle tough jobs, like making almond butter and tahini and the size is perfect for dressings and sauces. I wish I had better information for you but I can’t think of a different suggestion.I hope you have good karma in your search like I did! Cheers, Caroline

Oh perhaps you missed another very recent comment trail about this and I should have done a better job of explaining that I use homemade mayo from extra virgin olive oil. Sorry about the lack of information. I agree with you, regular mayo is not the best option!
I may get some anchovice!!

So you use 0% fat yogurt? That’s my preferred option

Yougurt & mayonaise.... No. For a Mediterranean pantry/ kitchen the proper ingredients olive oil and egg yolk.

@@mediterraneanminutes Ok Big difference. I just made one last night at my neighbours:) I am in Belgium and I always afraid to order Cesar salad because of the various approximations. I am traditionalist for salad dressings now as it’s so simple make. People spend a fortune on bottled grocery store dressings when actually you just need to keep a few key ingredients in the pantry for tasty & healthy dressing. I will look to your other videos. Hi Pete and absolutely, just swap for yogurt. We make our own mayo with extra virgin olive oil from the farm and eggs from farm-raised chickens (and sometimes just garlic and EVOO pounded into submission as alioli) but still I agree, less is more. And when non-fat yogurt can be an easy swap, it’s always a healthy option. Cheers, Caroline

@@NightmareFactory830 not even close dude. Try researching what you’re talking about before typing it. I’m a professional chef and have made Caesar 100s of times. I used mayo one of those times and will never do that again. It’s trash. Nice try bud
