What about the phthalates in almost all brands of olive oil according to the Mamavvation report that could cause health problems
@@waynekitchens6184 That’s a very interesting question and a challenge to answer with much specificity in this space. What I’ve found is that the issue is contamination from plasticizers and solvents used in the processing of some food products, including olive oils and many other products as well. As an emerging issue in research, you might find this link from webmd worth checking out to have a better understanding of the overall issue and extent of the potential problem (www.webmd.com/a-to-z-guides/features/what-are-phthalates). As you mentioned, the organization Mamavation has conducted their own studies about phthalates in olive oils (www.mamavation.com/food/olive-oils-tested-for-toxic-phthalates-buying-guide.html) and another research study conducted in Turkey in 2020 (www.tandfonline.com/doi/full/10.1080/19440049.2020.1766120#:~:text=Some%20types%20of%20equipment%2C%20tools,sample%20types%20(Nanni%20et%20al.) suggested similar issues from plasticizers and solvents used in processing and packaging. While the larger issue of phthalates centers around plastic containers, cosmetics, shampoos, vinyl toys, it is worth paying attention to food products overall. My best advice is to buy from smaller local producers f you can and seek out olive oil packaged in dark glass bottles. That’s not to say the contamination can’t happen at the processing level though. So if you know the process (like we used in California and do here in Spain), you can have some reassurance. For example, extra virgin olive oil is typically NOT produced with any solvents to eek out that last bit of oil from the pulp and the better brands will package in glass not plastic. Hope that helps to start your investigation. Thanks for raising the issue for the community! Cheers, Caroline
Looks so delicious!
@@kathydvorak3075 Oh my goodness, it truly is! Enjoy… Caroline
Hi, just an FYI the Kan knives link doesn’t open. Just thought I’d let you know.😊 The healthy snacks that I enjoy would be a grapefruit, tangerine and strawberries. Thanks for sharing. I’m experiencing the issues today.
@@2075vj Thanks much! I’ll dig into it. It is not an affiliate link or anything, I just like the knives and use them every day so I appreciate knowing it needs to be fixed! Cheers, Caroline
Chili with bite size zucchini chunks and carrots chunks.
That sounds like an excellent combo. Thanks for sharing! Cheers, Caroline
Can you share which brands you use?
Hi Cheryl - My favorite and the brand I use all the time is Oro Bailen from Spain but I am always on the hunt for others and there are so many here to choose from of high quality. In the US, the Costco Extra Virgin Tuscan brand gets high marks as does California Olive Ranch, Cobram in Australia.
Thank you for this!
You’re welcome, Samantha. Glad they work for you!
Incredible. Thank you. I’ve strayed a bit and needed to see how accessible coming back is.
Hi Meilei - Sorry it took a few days to respond and thank you for your positive comment. I’ve been on vacation for the past week and truly took some time away! Cheers, Caroline
Really helpful Btw are you looking for video editor?
Thanks for inquiring but no, I’m still at the level of doing it myself.
Can we add coconut or olive oil?
Interesting question and I can’t see any reason you couldn’t. Actually, I usually use olive oil for everything, including this recipe but chose to suggest a neutral oil considering the price of olive oil these days.
Beautiful recipe thank you... San Diego Ca.
Thanks, Pedro. Thank you for the positive comment. I apologize for not answering sooner but I took a full week off from YT for a little break. Cheers, Caroline
Great ❤💐
Thank you! Cheers! And apologies for not being able to respond to you sooner while on vacation!
She said avocados are full of protein, but I disagree.
Hi - Avocados contain 3 grams of protein and a healthy part of a diet that suggests a balance of 15-20% protein as part of your daily diet. Of course, avocados are known best for their healthy fats. This creamy fruit is rich in heart-healthy monounsaturated fats, particularly oleic acid, which have been linked to reduced inflammation and improved heart health. Avocado is also a good source of dietary fiber, which promotes digestive health and helps maintain a feeling of fullness. Additionally, it contains essential nutrients such as potassium, vitamin K, and folate. Hope this fills out the healthy advantages of including avocados in your diet.
Hello .thank you for the recipe .just back from a holiday in Barcelona where we had a good time .I will try to make crema catalana .can I use the grill of my oven to cook the top of the cream to get it nice and crunchy ?
Hi! I apologize for not answering sooner but I took a full week off from YT for a little break. I think it might be a bit challenging to use the broiler but worth the try. Good luck with it! Cheers, Caroline
How is a Split Pea and veggies soup cooked
Thanks for the question, Dudley. I apologize for not answering sooner but I took a full week off from YT for a little break. I haven’t prepared a split pea nad veggie soup recipe yet but will put your idea in the hopper for later in the year! Cheers, Caroline
@@mediterraneanminutes thanks Ma'am.
What do you think of Spains olive oil? Is it as good as one from Italy? I've heard the land it's grown on matters as some have more nutrient rich soil.
Hi Judy! Sorry for the delayed answer, but I’ve been on a little vacay. Spain has excellent olive oil, in fact over 60% of the world’s production comes from here. Italy can make wonderful oils too but much of what they export is Spanish oil bottled and marketed from big Italian brands… that is not to say it isn’t good though. Terroir is important for many fruits and vegetables but I’ve not seen any research that indicates a significant difference for olive trees. It is mostly a variable of type of olive (there are over 500 varieties), harvest date and process date. The biggest impact on quality is the time between picking them and processing them. ideally it would be less than 24 hours. Hope this answers your question! Cheers, Caroline
What about EVO in green plastic bottle???
Green plastic is ok since it does reduce the light factor. The Costco EVOO Tuscan brand is a good example of a good oil bottled in dark food-safe plastic.
Hi Carolyn, Could you speak about sour dough bread and it's nutritional benefits please.
Hi Kerry Ann, sorry for the delayed response while I was away on vacation. Sour dough can be a healthy option, especially when made with whole grain flours. Without getting into great detail in the space of this comment stream, there is a fair amount of information about it that I think this link might help answer your questions in more detail from webmd.com. www.webmd.com/diet/sourdough-bread-good-for-you

@@gigibardol8751 yay! Someone else on my team!
I like your channel. Happy to have found u. Great info but why .36? How to squeeze 20-30% of protein and calories into med diet?
HI Meg - The actualy calculation is .8 grams per kilo of body weight but knowing that most of my audience are Americans and not used to the metric systrem, I converted it. It is also important to point out that generally it is recommended that seniors should get even more… 1-1.2 grams per kilo of body weight. Also, I have a book coming out at the beginning of August that will provide 30 days of menus that balance these requirements and typically, on Wendesdays, I also post examples in my Community tab. You can go there and scroll back in the history of the post feed to see quite a few ideas.
