HEALTHY Mashed Potatoes

These Healthy Mashed Potatoes are light in calories since they're made with low-fat sour cream, but loaded with flavor - must-have Thanksgiving side dish!

🥔 MASHED POTATOES INGREDIENTS
2 pounds yukon gold potatoes
4 garlic cloves
1/2 cup low-fat sour cream
1/2 cup low sodium vegetable broth
2 tablespoon butter
Salt and pepper to taste
Fresh herbs like thyme, chives or parsley for serving
INSTRUCTIONS
1. Bring a large pot of salted water to a boil. Place the diced potatoes and garlic inside the pot. Cook covered until the potatoes are tender, about 16-20 minutes.
2. Drain and the return the potatoes and garlic to the pan. Add the sour cream, vegetable broth and butter. Using a fork, masher or electric beaters, mash the potatoes until smooth or until your desired consistency. Season with salt and pepper to taste.
3. Serve warm and top with fresh herbs, if desired.

    Yes! Use greek yogurt instead of low-fat sour cream. Both give a creamy, tangy taste to mashed potatoes. But sour cream is higher in fat and calories while Greek yogurt is higher in protein and has fewer calories.

    These Healthy Mashed Potatoes are made with low-fat sour cream, so they are perfect if you are on a low calorie and low fat diet. Salt and the other ingredients aren't bad, it's just important to not eat it in excess.

    @@Feelgoodfoodie facts. Thank you I also heard that most potatoes if not I’ll potatoes the skin have a lot of nutrients so would you prefer to make potatoes or mashed potatoes rather with or without the skin and is it still healthier even without the skin

    Seeing as 2 pounds is roughly 900 grams, you would need approximately 0.5 tbsp of butter.

    Even butter is healthy! But it's better not to mix carbs with healthy fats very often. Using fat free Greek yogurt instead of butter and instead of the sour cream would be a lower/basically no fat option. If you want to eat butter, eat it! Eat it when you aren't eating carbs, though😉
