    Missal is made with sprouted matki which is then cooked and tastes amazing too. I'm an archaeologist and at one of the digs I worked at I had uncovered multiple pits of ash with charred black channa which was dated to around 5000 years old. Don't know if this was an ancient cooking method used or just discards, but the botany professor from my college was very excited with this discovery.

    Certainly one of the best reasons to eat sprouts are for the enzymes. After that are the concentrated nutrients like sulforaphane in broccoli sprouts and other phytochemicals found in sprouts. My 3 favorite sprouts for health and taste are currently: alfalfa, broccoli and mung. Alfalfa and mung make for a good base to a sprouts salad with a sprinkle of broccoli and then I freeze some broccoli sprouts for green smoothies since they are stronger tasting and hide well in the taste of my green smoothie recipe.

    I eat Mung, Lentil, and Broccoli sprouts daily. I lightly steam them for around 1 minute before eating only if they've been in storage for more than a few days; otherwise, I just rinse really well and eat them fresh 🌱

  • @KatarinaS.

    @KatarinaS.

    Жыл бұрын

    So if they're less than 4 days old you just give them a rinse before eating, otherwise you steam them lightly? Is that because the longer they keep the greater the chance of bacterial growth? I keep hearing and reading different info about whether or not to consume them raw. It's made me afraid to eat them raw, but I love raw sprouts. I have recently started sprouting and really enjoy the process and love that I can so easily and affordably grow my own little veggie powerhouses in my own kitchen.

  • @Ralph_W

    @Ralph_W

    @@KatarinaS. I started growing sprouts about a year ago, and I love it too! It's a pleasure to interact with another sprouting enthusiast! Yes, I've been rinsing them thoroughly versus cooking them, and typically don't have sprouts in storage for more than 4 to 5 days in the refrigerator, so cooking them in any way has been an extremely rare event for me. And yes, my thinking was the longer they keep, the higher chance of bacterial growth, even when stored properly under refrigeration (but I'm no expert on such matters, just my general thought process.) I've been listening to TYI videos for a while now, I trust Hansaji, and her advice does have me reconsidering my practices with regard to sprouts. Here's some more information on how I'm thinking about this topic ~ I, too, have read and heard various takes on whether we should consume raw or cooked. The popular Fit Tuber says to never cook sprouts and that it destroys all nutrients ... Dr. Vivek Joshi says it's fine to eat them raw unless a person is immuno-compromised ... This website says cooking them only "slightly" reduces their nutrients: "Rusticwise dot com - Should sprouts be eaten raw or boiled" ... and of course one of my most trusted sources is Hansaji and she is telling us to cook them. After some thought, I'm now planning on experimenting with cooking them to see if there is any effect on my digestion (I do eat a LOT of sprouts everyday, and tend to get some bloating after meals.) I definitely much prefer the taste and texture of raw sprouts, but since I eat such a large amount of them, I'm thinking that fact alone might put me at higher likelihood of experiencing any potential adverse effects like indigestion or bacterial infection. My general thought on cooking sprouts was that it destroys enzymes and nutrients and might not be all that necessary for safety/killing bacteria if the sprouts are reasonably fresh and don't have a weird smell or texture, not sitting around in unhygienic bins for extended times, unrefrigerated, mishandled, or cross contaminated, etc. I have seen some information that the raw seed itself can be contaminated, even before exposure to water, ongoing moisture and germination which would seem to be the perfect combination of conditions for a bacterial problem. The Cleveland Clinic website says: "Are home-grown sprouts safe? Some sprout lovers prefer to grow their own at home. But this doesn’t mean they’re any safer from contamination. Since most outbreaks of sprout-related foodborne illness are associated with the contaminated seeds, it is no safer to grow sprouts at home than to get them from a store. If the seeds happen to be contaminated with bacteria, they can cause food illness regardless of where they are grown.” Based on all of these factors, I think it's quite clear that the safest way to avoid the risk of food borne illness is to cook sprouts. It seems to also come down to a risk/reward decision on whether preserving food nutrient content, prana, and taste/crunch is worth the risk of eating them raw versus cooked. Whether or not it is literally necessary for safety in most cases isn't as clear to me, but "better safe than sorry" seems to be the guiding principle here. In my experience, I've not had any problem with eating home-grown, refrigerator-stored, thoroughly-rinsed raw sprouts everyday for over a year now (besides the aforementioned sense of bloating) but I'm going to do some experimentation and see what happens in that area :-) I very much appreciate all of Hansaji's specific advice on sprouts, and all of TYI videos! Best regards and keep sprouting!

    i just cook them a little because there are two narratives one that in sprouts there are bacterias which germinate along with them(now in case you are really healthy these bacterias won't affect you) so according to point on ein case you know you are not that healthy then just cook them properly for the time point two some of the nutrients and vitamins are lost while cooking, but uncooked sprouts are really heavy and as i said when you are not well you need to eat light food so looking at these points you have to accordingly decide what you will do

Some small loss in Vit.C is coz it's sensitive 2high heat. If taken raw, then less in quatity is needed for de body, so less is consumed & it also helps to avoid gas bloating. If taken raw, salt rinse wash 1st; eat plain with out skin better with just a dash of lime (fresh ginger) or any dressing if u wish... Mixed with other sprout is no issue, even better nutrionally. Some people say sprouts shouldn't be cooked is it true ?

  • @potatorevolution8849

    @potatorevolution8849

    Жыл бұрын

    Yes. Cooking kills protein. Suppose one dal raw gives 20g protein per 100g. But the same dal when cooked will give less than 10g protein as it was soaked, boiled then cooked. In case of sprouts also same happens but we lose more protein when cooking sprouts since after sprouting they have become sort of activated and more prone to losing protein from heat. Since we can't eat or digest raw dal, so we have to make compromise there, but sprouts can be eaten raw so I eat it raw only.

    @@pratibhayeligar9344 You can have them at both times, Pratibha. Morning or evening, any time is good. Whichever time is convenient for you. I eat sprouts mixed with my fruit salad as breakfast on days when I don't have oats + milk for breakfast. And I have my Sprouts+fruits during evening time on the days I eat oats for breakfast. And my sister has it in the evening, so she doesn't eat dinner but around 200g sprouts instead of that. So, if you want to cut back on heavy dinner or already have a good, nutritious breakfast then have Sprouts during night. And if you don't have and healthy breakfast option, but a dinner plan which consists of dishes like vegetable soup, then you eat Sprouts in the morning time. :)
