Harvests and a Meal from our Homestead in Portugal
It took a year to grow and prepare the vegetables and preserves for this meal from our homestead here in Portugal.
This week we invite you into our kitchen share an evening with us making a simple plate of food.
Most of the ingredients we've grown here on the farm.
Olives, tomatoes, chillies, beans and potatoes.
It's lovely to really appreciate how much care and love that goes into the creation of a plate of food and the joy it brings.

Thanks for showing the lovely meal your made with your own produce, I see so many productive gardens on you tube but I always wonder what the end result is…….I find it more inspiring to garden when I see creative ideas for a meal, not some fancy pants creation but a real meal. Lovely! Though Dan trims those beans very deep with alot of wastage! Just the ends need trimming with the knife. 🥰 I would also add half a lemon juice. What a lovely life you are both living. 💕 🍷

We don’t even need to trim the ends, the beans are so tender. It took twice as long to make this meal because we filmed it so chop chop chop with bunches before we fell over with hunger. 😂 The ends are in the compost😊

I'll add that meal to my list. The sound of those crispy fried potaoes hitting the plate made me drool. Will the bean/tomato dish be as good without the sundried tomatoes and honey garlic I wonder? My twelve, 7 gallon felt grow bags of potatoes are ready. I will need to find a way to store them this early in August or give a bunch away. Love to watch you reap the harvest of your efforts.

It’s funny you say that because we’re not taking our time with the renovations. We only recently received the permission to start the works and now everyone is on holiday. Our little rental house is comfortable thankfully. Dan works full time as you know and we need a space for that. Sadly we don’t have an oven. We miss that. Good luck with your search. 😊

Best feeling when you know what you are eating came from your own garden❤. I had never heard of fermented tomatoes until you had posted in a previous video. How long do they last and what else can you use them for ?

We use them in any dish you might use tinned tomatoes ( for depth of flavour) or as a tomato purée substitute.

Saha (that’s Arabic for health. It’s usually said before you start a meal or after or meanwhile eating 😅). So for many years of saha, happiness, peace & love to you both. I am very curious about the taste of fermented garlic in hony, will definitely give it a try ♥️

It's such a pleasure to follow you! Do I see a microwave in your kitchen? If so, Here's a suggestion -- scrub your potato peels well before peeling them, put peels in a bowl with a small splash of oil, salt, pepper and whatever spices you want -- anything goes' really: a bit of chili, a crushed garlic clove, some paprika, or cayenne pepper. Mix well, remove big pieces of spices that might burn, spread potatoes on a plate, microwave for 1 min or so, turn peels over, microwave a bit until they start to brown. They'll puff up a bit. Let cool, they'll crisp up. You chips. Bonus: you get vitamin B12 in the most natural way possible. Carrot chips are nice also .

I’ve been growing and gardening most of my life and Dan and I have been growing fruit and vegetables together for about 12 years. We’ve had to relearn and adapt to this climate and of course we’re always learning. Thank you for your question, Gordon. 😊

Hi guys, I saw that you use potatoes that have a green part. As far as I know, the green part of a potato contains toxins called solanine, so the green part should be removed and not used for food. A part that sprouts can be simply cut, dried for a few days and replanted in the garden.

Ah yes, we always cut off the green bits and any other bits we might not want to eat. Straight into the compost it goes. We have 40C at the moment so we can’t regrow potatoes in our climate at this time. Useful tips thank you 😊

Can you use the fermented garlics in Honey as well, or just the juice? How long can you keep them for in the jar, and how long do you keep the tomatoes fermented for , any chance you can add the recipes please, loved the food looked yummy, thank you

Yes you can use the garlic as well as the honey. The garlic is really mild with a hint of sweetness and has already lasted over a year. We’ll keep using it until it’s finished or doesn’t look or smell right ( if that happens, we’ll share the news)

We put a link to the fermented tomatoes in the description and what you saw with the garlic fermented in honey was the full process- peeled garlic cloves in a clean jar covered in raw honey from our neighbour. It does its thing on the shelf and the jar we use let’s gasses escape and prevents air from getting in.

What a great way to celebrate your fabulous produce. You pair are so very inspiring. Is the only thing you had to buy was the balsamic vinegar? Would you endeavour to produce this also? The garlic in honey and the tomatoes are about a year old. We’ll keep using until they don’t look or smell right. I expect the garlic in honey to last another year before a new batch is made and the tomatoes you saw are almost finished. New pot on the go. We bought the balsamic, salt and pepper and we don’t plan on making ‘balsamic’ though I reckon we’ll accidentally make vinegar when we start wine making. 😊
Your videos just make me wonder if I should go for an early retirement… 😭

They are amazing, Lea. Cherokee Trail of Tears. They mature into deep purple pods and a shiny black bean for the pantry. I’ll send some over to you as I’m planning a fresh sowing in a couple of weeks. Let me know if you want some. 😊

Yes. Good for both. And they can be planted again towards the end of August for a late crop. We’ve been growing them from our own saved seed for 10 years. I’ll pop some in the post to you this week. 😊

Dan is a vegetarian, but as for me, I eat everything indeed almost anything put in front of me. We share our surplus veggies and swap for eggs which means one less job for us. We won’t be getting chickens any time soon as cute as they are. 😊

Btw your garlic looks tasty, we bought some recently at the garlic farm in IOW (husband did the around the island race) their garlic looked very similar to yours and is like no other garlic in the shops. 😋 I’m tempted to try the fermented garlic and honey.

Ooh, I did the around the island race too, some years ago. We lived across the Solent in Hamble. Dan was racing in Cowes Week last week and we loved our visits to the garlic farm. Did you ever try the garlic ice cream? We bought our smoked garlic from them and started growing elephant garlic (which is actually in the leek family) after we tried a roasted elephant garlic. The garlic 🧄 they grow is very good. Have you ever tried black garlic? It’s amazing but I’ve not made it yet. The process is weird. If you have lots of small garlic bulbs that are unlikely to last long storage, they’re the ideal ones for fermented garlic in honey. They have a complex flavour and really add something special to the meal- milder than fresh garlic and very different to other fermented food. Highly recommend giving it a go. Time consuming but easy. 👍

I thought you were making some Asian-Mexican dish until you brought out the taters at 11:40. Have you considered raising some guinea fowl, you can leave them loose and they will clean your veggies of slugs and insects, they're half wild and need minimal care. They make a terrible racket though, will ruin the quiet of the homestead.

We make meals with whatever we’ve got. Would also be lovely with rice, pasta or just bread. Hope you enjoyed it. The Guinea fowl could likely become a favourite snack for the eagles, mongoose and foxes we have. 🤣 Definitely no Guinea fowl although they are beautiful.
